I am a professional chef specializing in pastry and bakery items. I bought this for my home for occasional use. I was a bit hesitant having read one review that said it was "wobbly" and did not cut straight lines. Since it was for home use I figured I could deal with that since I don't have to produce to the same standards as in a commercial kitchen.

I was pleasantly surprised to find this unit is very solidly constructed, the wheels have little to no wobble and the width adjusts easily by loosening a small nut, opening it to the desired width and re-tightening the nut. It allows me to cut pasta, doughs, puff pastry and other items with precision and I get even, same-size portions. The only thing I can think of is that they may have some quality control issues and that the other buyer may have gotten a "bad one." As far as I am concerned I am happy with this and I am keeping it.

I love the Ateco 5-Wheel Stainless Steel Cutter. It is sturdy, easy to use, and easy to clean--just put in the dishwasher. For years, I used a smaller, plastic pasta bike to cut my pastry and pasta. The plastic cracked and a wheel fell off and got lost, and no replacement parts could be found. So, I finally got this new 5-wheeler, and I use it every week. I have had no problem with wobbling--just make sure the wing is tightened. I wish I'd bought this years ago. It makes cutting pastry dough and cracker dough a breeze!

Don't recommend this item for large production - we own a bakery, and it is wobbly and difficult to control. It's worth spending more to get the proper one for commercial use. Maybe it's ok for home use, but cannot imagine why anyone at home would really need it.
