Best Knives I've Found,

Being a bit of a foodie, I've searched for the perfect knife. I have purchased single knives for $60, and sets costing hundreds. The Bakers & Chef knives are now the only ones I use. I found them while on the job in a second rate kitchen. I now own two sets of each type for my home. These knives aren't pretty, but they hold an edge, are easily re-sharpened, have a quality grip, and have never let me down. Even better, I haven't paid $60/knife, so they're relatively disposable if they ever do go dull. One caveat... you must know how to use a knife sharpener. My in-laws took the edge off of theirs within a month by running it on glass prep surfaces and trying to sharpen them using the wrong techniques. Even so, they're still the sharpest knives they own, just difficult to cut with when you're used to a properly honed set.
