About the Author

Zachary Schat is a fifth-generation baker. After graduating from the University of California he bought a struggling shop his father had recently acquired. In five years he tripled daily gross sales to $1,500; then he opened a branch across town. Besides his own start-up experience, he brings 150 years of his family's baking background to the book.

Too many books written for people interested in starting their own business are written by professional writers who have no conception of just how deeply one's determination must be if they are to succeed. This book is not one of those.
Zachary Schat has done a great job explaining the pitfalls and rewards of owning your own bakery. I re-lived my early days in starting my bakery, Billy Boy's, that one day would venture before the world as Billy Bob's Pot Pies fast food franchise.
Although this book concentrates on his experience in bread-baking, it is general enough that it can be used in any sort of bakery and many deli's and restaurants.

Again, this is an excellent book that I will keep in my reference library.

A Baker's Trade offers practical advice to all who are interested in starting a bakery business. When I read the book, I feel like Schat is there beside me sharing his experiences in his tough-cookie voice. True, his style is not literary and some might feel that the book is not well-written because it's tone is so conversational. On the other hand, it's precisely the informal and conversational tone that convinces one that the contents were written by a real baker, not a writer. The advice given is authentic and the desire to help other would-be bakery operators is sincere. I highly recommend Schat's unselfish book to all who are interested in knowing how a real bakery operates.

Schat has done a great job of explaining the large and small details of owning a small bakery. The book is sprinkled with ancedotes and information from other bakery/food business owners. A great starting place if you are thinking of opening a bakery.
