Too many books written for people interested in starting their own business are written by professional writers who have no conception of just how deeply one's determination must be if they are to succeed. This book is not one of those.
Zachary Schat has done a great job explaining the pitfalls and rewards of owning your own bakery. I re-lived my early days in starting my bakery, Billy Boy's, that one day would venture before the world as Billy Bob's Pot Pies fast food franchise. Although this book concentrates on his experience in bread-baking, it is general enough that it can be used in any sort of bakery and many deli's and restaurants. [...] Again, this is an excellent book that I will keep in my reference library.

A Baker's Trade offers practical advice to all who are interested in starting a bakery business. When I read the book, I feel like Schat is there beside me sharing his experiences in his tough-cookie voice. True, his style is not literary and some might feel that the book is not well-written because it's tone is so conversational. On the other hand, it's precisely the informal and conversational tone that convinces one that the contents were written by a real baker, not a writer. The advice given is authentic and the desire to help other would-be bakery operators is sincere. I highly recommend Schat's unselfish book to all who are interested in knowing how a real bakery operates.

Schat has done a great job of explaining the large and small details of owning a small bakery. The book is sprinkled with ancedotes and information from other bakery/food business owners. A great starting place if you are thinking of opening a bakery.

If you are thinking about opening a bakery, this book is for you. Packed with information,anecdotes,and a great appendix, the whole task is laid out in a very easy to follow and easy to understand manner. I highly recommend this book

So there are a few grammatical errors. But yoou can stil readd it and see that their is valuble information in it!
I have worked in two bakeries and have decorated cakes professionally for over 8 years. This book is fabulous and very generous for Schat to share - it really gives you an inside look into the heart of a bakery... what it takes to run one well. I enjoyed learning from his expirience.

There is some good information in here, but the author really seems to enjoy listening to himself talk. He rambles quite a bit, and because of that I just leafed through the second half of the book looking for important bits. If they cut out all the the passages where he pats himself on the back and brags about his success, it'd be a good book.

I was looking for specific information on how to start a bakery. Instead, what I found is a very generally written book that could have been on anything. I expected to learn what equipment I would need. For instance: what kind of oven should I purchase? Convection? Pizza? Who makes the good ones? The bad? Gas or electric? Grammatical and spelling errors aside, this book is mediocre at best.

If you look for a book that explains clearly and concretely the baker job and how to run a bakery business, buy this book. It's very useful and very practical.
