Format: Hardcover Verified Purchase
This is the single worst text book on the market. Not only did I have to buy it for culinary school I purchased the study guide as well.

The recipes have errors. Like 3 oz of salt and not 1 oz of salt. The study guide answers are WRONG too. Seriously? I always say, want a better answer ask a better question. Unless the answer guides you in the wrong direction. If you must buy for school be forewarned. If you are a director at a school. DO NOT put this in your curriculum.

I have been cheffing for 18 years and this book has helped me so much to improve my baking it has everything you can think of for baking in it.
