Barefoot Contessa Pantry Coconut Cupcake Cream Cheese Frosting Mix.

I made this cupcakes after biting the bullet because they are way too expensive for a mix, but I hoped for the best. They were rather dry and donuty and the frosting had an off unpleasant taste. I'm not sure but the vanilla in the frosting tasted artificial. I would not reccommend this mix because of the high price and rather low quality.

I usually like Stonewall Kitchen products, so I was excited to see one of my favorite recipe book author lending her name to a product. I finally bit the bullet and shelled out $10+ for a boxed mix and I was SOOOO disappointed! The box comes with three packets - the cake mix, coconut, & "frosting mix" (which is just powdered sugar). The cupcakes were okay - they were pretty moist, but I used all the coconut in the cake rather then reserving 1/3 for the topping (I used additional store-bought coconut for the topping). The "frosting" was awful - it's the packet of sugar mixed with butter and cream cheese and it was very bad when made as directed. I added in about another cup of powered sugar to make the constancy spreadable and taste right.

Over all, the cupcakes were a hit, but for a $10+ mix that makes 12 cupcakes I shouldn't have to buy and add my own ingredients! I could have easily done this from scratch for the same or less money and it would have been just as simple!

loved this recipe as i am a coconut lover to begin with ,but this mix went far beyound the typical mixes-it was like homemade-thankyou

These things are awesome and worth the money. If you're really into the coconut cake/cupcakes, try Ina's recipe for coconut cake on the Food Network website, it is work-intensive but so good.

I thought 10 bucks was a little much for the cupcakes but I love Ina Garten and really wanted to try them so I went ahead and bought it. I'm glad I did because they were delicious! I couldn't wait for them to cool to frost them and the top of the little cupcakes were nice and crunchy (I may have baked them for a couple of minuted too long). They were fantastic with and without the frosting! I got the original recipe off of Food TV's website, made it and the end product tasted exactly the same as the boxed one I'd made. I will probably not buy the box again since I have the recipe and can make more with less money from that. I do highly recommand this though!

I just made these cupcakes; they are to die for. They are very easy to make and if you like coconut, you will LOVE these cupcakes. I left the coconut off 3 of the cupcakes and they are delicious even without. Mmmmmmmmmmmmmm.

N.B. This mix makes TEN cupcakes not 12 like you might expect.

There are not enough verbs in the English language to describe how good these are!! My mom loves coconut and I made these for her 60th birthday. She loved them...but I am IN LOVE with them!!! I love the cupcake and am going to try the coconut cake next time!

I originally received this mix as a party favor. When I finally got around to making the cupcakes for some friends, everyone loved them! I was sad to have to tell everyone that they came from a mix but everyone asked for the recipe. I even took the leftovers to work where one of my co-workers made me promise to make her a cake out of them for her birthday (which I did). They are kind of pricey but it's almost a year later and people still bring them up!

I'm not one for the boxed mix -- this was a gift. I've just finished frosting these cupcakes and am in love! This super easy kit produces the finest cupcake; moist, dense and flavorful, that I've tasted. The cream cheese frosting is silky and perfect.
