Texture

Preparing This Pasta

1. Bring 4 - 6 quarts of water to a rolling boil, add salt to taste. 2. Add contents of package to the boiling water. Stir gently. 3. Return to a boil. For authentic "al dente" pasta, boil uncovered, stirring occasionally for 10 minutes. For more tender pasta, boil for an additional 1 minute. 4. Remove from heat. Drain well. 5. Serve immediately with your favorite Barilla sauce.

I'm celiac. If this were not gluten-free, I'd know, pretty rapidly. I'm certain this is actually gluten-free.

I made a one-dish pasta/pepper/soy chorizo meal with this tonight, and it turned out quite well. This is a good corn pasta, and it acts like wheat pasta in larger dishes. My non-gluten-free significant other said it was good enough to make again.

One caveat: ignore the cooking time on the box. You'll need to boil it about twelve minutes, not ten, for the pasta to be really cooked.

My household is not gluten free, but we buy a number of gluten free products in order to entertain xgfx friends, and as a way of varying our diet. We are fond of a brand of quinoa spaghetti, so we tested this new Barilla product with apprehension. Happily, we thoroughly enjoyed it. The taste and texture are surprisingly close to wheat spaghetti, and I think many people will not notice the difference, especially when covered with sauce. It is a bit firmer than wheat spaghetti, both in the cooking process and the final result. It softens slowly, so you may want to stand by and stir to keep it under the water and to avoid clumping. I suggest cooking it for approximately 1 minute longer than the package directions. The firmer texture and the corn-rice flavor are most noticeable when cold, so take note if you are planning a cold pasta salad. These are not objectionable characteristics, just differences for which you may want to account in such a recipe. This fine product will definitely go into our pasta rotation in the future.

My wife has been on a gluten free diet for a few years now, which means I get to try a lot of gluten free food too. It's just too much trouble to prepare two separate pans of pasta all the time so when we make pasta (which is often, since we are Italian), I eat what she eats. We have tried a variety of gluten free pastas and the vast majority suck. Most have a bitter or strong nutty/soy flavor and they are difficult to cook. Many are tough. We found one rice pasta that was passable but just barely and it had a very gritty texture. It also took a long time to cook. It was awful re-heated. Barilla Plus was my pasta of choice for a healthier pasta before my wife went gluten free so when I saw this, I thought we would give it a try. It is really good. I'm not going to lie to you, it doesn't taste exactly like semolina pasta but it is very close and far, far better than any other gluten free pasta I've had. This and the R brand are the only 2 gluten free pastas I've had that are worth eating. The taste and texture are very similar to the real thing. The instructions say to cook it for 10-11 minutes. I cooked it for 10:30 and it was perfect. Both my wife and I liked it. So if you are on a gluten free diet, give this a try.

I am a vegan of many, many years who also happens to be afflicted with Celiac Disease. I cannot tolerate gluten in any form without getting extremely ill so I was really excited to be offered this gluten-free spaghetti from Barilla to review for Amazon's Vine program. I love nothing more than a great big plate of spaghetti.

Unfortunately I discovered too late after ordering this product that one of the ingredients of the pasta - the Mono- and diglycerides - is suspect for not being vegetarian. I base this on the following information about Mono- and diglycerides from Wikipedia:

"Mono- and diglycerides of fatty acids (E471) is a food additive used as an emulsifier.
These synthetic fats are produced from glycerol and natural fatty acids, from either plant or animal origin. E471 is generally a mixture of several products, and its composition is similar to partially digested natural fat.

Concern for vegetarians and vegans:
E471 is mainly produced from vegetable oils, although animal fats are sometimes used and cannot be completely excluded as being present in the product. The fatty acids from each source are chemically identical. However, vegetarians and vegans, not wishing to consume any animal products, generally avoid products containing E471 unless they are certain that it is derived from vegetable oils. Also, because there is a chance of pork fat being present, Muslims and Jews will also avoid products containing E471 unless they know that it is made from vegetable oil."

For any Muslims and Jews who might be reading this review, this Barilla product is Kosher so it is safe to assume that the Mono- and diglycerides are not derived from a pork source.

As an Italian that knows how good pasta tastes, this is pretty darn good. Now I am not going to tell you you cannot tell the difference between this and regular gluten pasta that would be wrong. But for a gluten free product you cannot get any better in my mind.

I made this with one of my favorites, spaghetti and clam sauce, and wow. It was so close I could hardly tell it was not the regular Barilla spaghetti.

So if you are gluten intolerant try this, I think you will be very surprised how satisfying it is.

I've eaten three or four gluten-free pastas in the last five years or so, so I think I'm fairly objective. First off, it's great this pasta is made from non GMO corn/rice. That's a big plus. Also, even though it's a little spendy (compared to regular pasta) the price is actually quite reasonable.

The package says it cooks in 9 minutes?? Not even close! haha. More like twice that amount of time. The one thing about this pasta is I don't like the texture as much. It always seems a little harder or something, than other pastas I've tried. I can tell this is gluten-free, whereas in some of the other kinds I've tried, I can't tell.

So this certainly isn't a bad deal and is worth a try. It's just not my favorite gluten-free pasta so I'm not sure if I'll continue to eat it or not.
