I have been baking with Clear Jel for about 10 years now. Corn starch breaks down when pressure canned but Clear Jel maintains consistency through high heat. I always use it in place of corn starch for pie fillings and the like.

Want to preserve your peaches & apples as pie filling? I've been using this product from Berry Farm for 2 years and it makes a wonderful thickener for canning pie fillings.

Clear Jel, 1 lb.I made some apple pie filling and canned it for use this winter. My filling remained clear, not cloudy and retained the correct consistency for a good pie filling. I strongly recommend it over sure jel for canned pie fillings.
