This clever stainless-steel rack from Bayou Classic lets you cook a turkey via the beer can method with less worry about the can spilling or getting knocked over. A can of beer or soda fits securely in the stand's center (which protrudes into the bird's cavity), while two side flanges provide support for any turkey up to 15 pounds in weight. The turkey can be cooked on this rack in a variety of ways: through indirect heat on a charcoal or gas grill (with at least 12 inches of height clearance), inside an oven, or in a turkey smoker. Reusable and dishwasher-safe, the 11-by-5-by-6-inch TurkCan rack makes an excellent and novel gift for the outdoor chef.

Instructions included with the rack make the process easy. Basically, the can is half emptied and seasonings such as Worcestershire sauce, lemon juice, and minced garlic are added. When heated, the liquid creates a fragrant steam that keeps the turkey moist. The neck of the turkey should be closed with either a potato or toothpicks to prevent the moisture from escaping. Used this at thanksgiving. Mess cleans up easily, skin comes our crisp but inside is moist. We use apple juice. I have a couple of smaller ones for chickens. These are great.

After years of beercan chicken smoking, we decided to try it with a Turkey for Thanksgiving. This rack is just wwide enough for a 15 oz. Foster can needed for the bigger bird after manipulating the metal a little and narrow enough to standup a 12.5 lb. turkey perfectly. I am sure you could do a slightly smaller bird and any bigger size bird if your smoker is tall enough.
For those who hate turkey, the steam inside the bird and the ingredients in the can will soften the interior so you have a moist and tasty bird, rather than the typical dried out roasted turkey, without worrying about the bird tipping over.

Have used this several times - makes wonderful chicken. Only wished it came with a drip pan - so bought some aluminum disposable pans. Bought a cookbook for beer can chicken and it has provided some excellent suggestions that were new to us - yummmmmm!
