Induction
Induction
Induction cooktops for faster, more efficient cooking.

Induction is the third method of cookware; it is more efficient than electricity and faster than gas. It works off of reverse magnetism and has been used by chefs, hotel chains, and caterers globally for many years. It is also widely popular in households in Europe and Asia. To test if your pots and pans are induction ready, do a simple magnet test. If a magnet sticks to the bottom of your pot or pan, it is induction ready.

Why induction cooking? You save energy three ways:

  • Induction heats up your pots/pans super fast, resulting in less cooking time
  • It uses less electricity than an electrical element, and is more efficient (less wasted heat and energy)
  • The pan itself is the element or source of heat, resulting in less temperature

EarthChef Cookware - Care and Maintenance

Before your first-time use:

After unpacking your cookware, make sure to remove all labels and then wash in warm, soapy water with a soft sponge. Rinse thoroughly and dry completely with a soft cloth. EarthChef cookware is dishwasher-safe, on the economy cycle, but we recommend washing them by hand. This extra care uses less water and energy and protects your pans from the harsh heat and detergent of a dishwasher.

Before heating your new EarthChef Nonstick cookware for the first time, you should lightly coat the inside of the pan's nonstick surface with a little vegetable oil on a paper towel or soft cloth. This will lightly season the pan's surface and enhance the nonstick properties of the all-natural ceramic coating.

Cooking with your new EarthChef products

Using oils, butter, or margarine to fry or saute foods in your new EarthChef Nonstick cookware is not necessary due to the all-natural nonstick ceramic coating. If you choose to cook with one of these products to enhance browning or flavor, you should follow these guidelines:

  • Be sure that you always start with a clean pan.
  • All oils smoke or burn at different temperatures. Be sure to test the oil that you are cooking with at a low to medium heat prior to adding your food to the pan.
  • Add just enough oil to cover the bottom surface.
  • Allow the oil to heat for one to two minutes over low to medium heat before adding food to the pan. The preheated oil will also help enhance the nonstick properties of the pan.
  • Allow your food to come up to room temperature for about 10 minutes before adding it to the pan.
Other helpful tips while using your EarthChef cookware
  • Always try to match the size of the burner to the base of the cookware piece you are using.
  • If you are using a gas cooktop, be sure to adjust the flame so that it does not flare up the sides of the pan. This will cause discoloration on the outside of the pan, possible damage to the handle, and possible personal injury from getting burned, as well as using more energy.
  • You should use medium heat when preparing meals. You should only use high heat when the pot is full of liquid for boiling pasta, making stocks or deep-frying.
  • While you can use metal utensils with your EarthChef nonstick cookware, they will cause some scratching of the surface and scratches are not covered in the warranty. We recommend using bamboo, silicone, nylon, or wood utensils to protect and extend the life of your pan.
  • Never cut food while in the pan or gouge the pan as this will damage the surface and will not be covered in the warranty.
  • Never allow a pan to boil dry.
  • If you have remains of food stuck to the cookware, for example from blackening fish, they can easily be removed by covering the bottom of the pan with water and letting it soak off at a very low temperature. Burnt-on remains can be removed in a similar way, by letting the water boil in the pot or pan for just a few minutes and then working the burnt area with a wood spoon. Do NOT use a metal utensil as you can gouge the coating's finish. For your stainless-steel cookware, you can also use special detergents such as BergHOFF's Stainless Cleanser or BergHOFF's Magic for Stainless Steel.
Care and Cleaning

All BergHOFF products are designed to exceed your expectations; however their performance can be diminished if they are not properly cared for. Remember to cool your pans down before cleaning them as you can warp your pan by putting it into water directly from the heat source. Be sure to clean your pan thoroughly after each use, using warm, soapy water and sponge or a dishcloth. Then rinse in warm water and dry immediately to prevent water spotting with a soft cloth. Do NOT use steel wool or nylon scrubbing pads, oven cleaner or any cleaner that is abrasive, is a citrus based cleanser or contains chlorine bleach, especially on your stainless-steel pans as this will damage your pans finish. Do NOT gouge the nonstick coating.

While your EarthChef pans are dishwasher-safe, be sure that you do NOT use a detergent on your stainless-steel pans that is based on citric acids (lemons) or contains chlorine bleach. These products can damage the anti-oxidation layer and can lead to corrosive reactions. Any signs of corrosion can easily be removed by using a good stainless-steel cleanser, like BergHOFF's Stainless Cleanser or Magic for Stainless Steel. Also, you should use the lowest heat setting as high drying temperatures can also cause damage to the anti-oxidation layer.

The EarthChef cookware comes in two different materials: full stainless steel and aluminum. The non stick-coating on the aluminum pans is naturally six times stronger than any traditional nonstick coating and does not contain toxic or hazardous materials. (PFOA-free and PTFE-free).

The strong, professional riveted handles are another feature: made of solid cast stainless steel, they will stay firmly attached for a lifetime.

The base on this cookware is suitable for use on any type of cooktop surfaces including induction, making it energy efficient and fast, with a guaranteed even heat transfer.

If you are looking for non stick this pan may be for you. The ceramic coating is great, nothing sticks and clean up is easy. However there are a few things I wish were better. The bottom of the pan has a black almost sprayed on finsh. I use this pan on a gas stove and moving the pan along the cast iron grates causes the black finish to become chipped. Also the pan seems to be raised in the center. If you place liquids in the pan the liquid slows off to the sides.

I was quite happily making fried eggs with almost no oil just minutes after getting this pan. Nothing stuck, and the pan was quite easy to clean with just a wet sponge once it cooled down. Just as easy as any PTFE-based pan I've used in the past. The pan itself is well-designed, and it works perfectly on my induction cooktop. (The first non-PTFE non-stick pan I've found that DOES do this successfully!)

I've noticed that most of these non-PTFE pans get very good reviews at first, but often start breaking down within a few months. I'll be sure to edit my review after a while either way, to note whether the pan is failing or not, and adjust the rating if needed...

Apr 30, 2012 edit: I've had the pan for about 6 months now. The non-stick coating is holding up quite well, in my opinion, though it does seem to have degraded slightly since it was new. I've noticed that small bits of food will occasionally stick...but these just wipe off with a sponge.

My only complaint (as noted in the comments) is that the bottom does bulge a bit towards the center, so liquids pool around the edges somewhat...making it easier to burn things in the center if you're not attentive. I'm otherwise extremely happy with this pan, though!

I have to say I am surprised at the good reviews this frying pan has received. I purchased 2 of these pans a 12'' and a 8" from one of those shopping websites that require you to be a member.

When I first tried them, I have to say that I really liked them. The finish was great, non stick, smooth and very easy to clean. Then after about 2 weeks of use, the center of the pan rose up higher than the sides. This created an uneven surface that caused the food to "run" to the edges of the pan. What remained in the center burned while the food in the ditch around the edge remained uncooked. Since I mainly use the pan for cooking eggs this pan is just about useless. Then after about 2 months of use, the pan began to lose it's non stick quality. With every use more and more food stuck to it. Now after 6 months it is totally useless. Everything sticks, burns and runs to the sides. I took very good care of these pans. I never used higher than medium heat and I took care to make sure that I never used anything that would scratch the surface. The only thing positive I can say about the pan is that the surface doesn't seem to flake off like the old "teflon" non stick pans do when they get old. But what does that matter when they lose their non stick quality after such a short time??? The bottom line is these pans are awful!!!

I am so disappointed. I had to throw the 12" pan out. Needless to say I will never buy another one. Next time think I will try All Clad non stick.

The Berghoff seems well constructed. I have not tested it on a high technology stove, but it looks like it was built to work with one. In use it comes pretty close to Teflon in performance at Teflon's recommended operating temperatures, although just a little bit less non-stick than Teflon. So far it washes as easily as Teflon. The Berghoff can be used at temperatures that exceed Teflon's limits, although high heat may not be the best way to cook. There is no dedicated lid, although a Nordic Ware Restaurant 10 inch Brushed Stainless-Steel Lid fits pretty well. The bottom plate picks up some residue at high temp on my stove, but the exterior's durability seems confidence inspiring so far. Long term durability and functionality of the interior remains untested.

Pasted below is a mini-diary of some comparisons:

Stove is an ordinary, four-burner, electric coil stove.
2/1/12
Berghoff and Orgreenic treated with high-temp safflower oil, 25 minutes medium to medium-high heat.

2/2/12
Eggs, low-medium to medium heat. Light application of olive oil.
Cooking: All required a spatula to flip.
Farberware & Orgreenic tied.
Berghoff slightly more sticky with thin bits on egg clinging to pan.
Cleanup: Interiors of all easily cleaned up with soapy water and soft sponge, more easily than the nylon Good Cook spatula.
Exteriors: The ceramic pans show some persistent residue from the previous seasoning. The metal exterior bottom of the Berghoff looks a little better than the gray exterior bottom of the Orgreenic, which is showing a lot of little chips.
The metal bottom of the Farberware pan looks cleaner, probably because as a Teflon pan settings higher than medium are always avoided.

I really like the cooking performance of this skillet, however, the pan is not flat on the bottom. It is raised up in the middle, so for instance, when you pour in a little oil, it all flows to the edge and there is no oil left in the middle. I don't have an induction cooktop, but seems like that would not work if you had one. Clean up is a breeze. I love the handle, it is very comfortable. If not for the uneven bottom I would buy the smaller size as well. I'm going to try out a different model BergHOFF to see if I can find one with a flat bottom.
