I bought this book today and sat down and went through it page by page. Needless to say I have way too many sticky notes stuck in the book now for all the recipes I want to make. Plus, I learned a few new things while reading through several recipes and seeing how they came up with them. I didn't know that adding seltzer water to waffle mixes will keep them airy...can't wait to try that. That mini marshmallows are coated with cornstarch, so you should use the big ones and cut them in half (for sweet potato casserole). What potatos to use and how to slice them for a good roasted potato dish. So many great ideas, and the recipes do not seem dauting at all. Not a lot of exotic ingredients or bizarre cooking methods. The authors/cooks really try to find the easiest but most effective way to cook foods. I have last years Best Of book, and am quite glad I found this one. These are the only cookbooks I will buy anymore.

I am such a fan of the Test Kitchen books. I have several and this one is fabulous too! I have tried several recipes and love them. I especially like how they let you know what they tried and what didn't work and WHY.

I purchased this book to give as a wedding gift and once I looked through the pages decided to purchase one for myself. Every recipe I have tried has turned out beautifully. Some recipes take time to prepare so you just have to plan for it. The tamale pie was excellent. AND the enchilada recipe was so amazing. The beef stew is super - such wonderful flavor. My one suggestion is - Don't leave out a single ingredient. I read and re-read all the chef notes before each recipe. This cookbook will make you a better cook than your mother-in-law!!!

Black and white photos accompany step-by-step preparation instructions perfect for general cooks. The voice of the test cook who refined each dish accompanies each recipe, providing many culinary insights in an outstanding top pick highly recommended for any general or culinary collection.

This is the first of the cookbook series that I have purchased. I collect cookbooks and love the "America's Test Kitchen" show so this was perfect for me. I made the frosting recipe (but not the cupcakes) from the front cover and received rave reviews. I was even asked to if I would consider making an selling cupcakes; they were that good! Can't wait to try other recipes from the book and adding to my collection.

I own hundreds of cookbooks and I use about 10% of them. Once I stumbled across this series, I dedicated myself to cooking one new recipe from them every day. I have learned so much about technique, food, cooking in general. I apprenticed as chef out of college and learned quite a bit, but these books have taught me the science and rationale behind measuring, combining ingredients, where I can fudge/alter/be creative and where I absolutely cannot. I was never a "follow-the recipe" person because I have always relied on my intuition about flavors. I cooked for a restauarant and did very well--a novel art cafe where I served two new dishes every day. Now I wish I'd had these books at my avail during that time. One mild criticism--these books try to combine good taste with efficiency so sometimes you don't get the benefit of doing things the "right" way--one that would allow you to become familiar with a more traditional approach with perhaps marginally better/finer results; however, I wasn't ready for the "cordon bleu" course yet. I can guarantee you will not be embarassed to serve any of these recipes for your most cultured guests. I am so excited for you to begin your adventure with these books!

America's Test Kitchen publishes many good products, including Cook's Illustrated. This book is a compilation of many of their best recipes. They use the scientific method to determine the best method and ingredients to determine the best recipe. It works!
