Just as all the other books and their magazines, this book will not let you down. The recipies are wonderful. There are great explanations for each step and a story for how the recipe came about. It is a must have for your kitchen. The chicken picata recipe is to die for.

My husband says, "Cook's Illustrated provides the best in-depth analysis of any recipe, the things you want and need to know. Everything I have cooked out of this book turned out to be wonderful, and reading how they got there and all the things they tried is extremely interesting. The only drawback I can see on the series is the recipes are adapted to American taste expectations so some increase in herbs and spices may prove beneficial. But follow the original recipe at least once. The other thing I noticed, being the owner of five of their cookbooks, is that you will find overlap between the books. That, however, can not really be avoided and is definitely not a major detraction. The introduction to the recipes is the stuff of bedtime reading." I say everything he has done out of it is terrific.

I just can't say enough good things about the Cook's Illustrated Cookbooks and this one is no exception. The recipes always come out well. They give you great advise throughout the book. Another keeper...

I first found this in the great room in front of the roaring fireplace of a 300 year old B&B in Patzcuaro, Michoacan, MX on an overnight on the way to the beach.
I offered to buy it, but the owner would not sell. Subsequently, I bought a copy on line and have used it for years. Mi Novia of 8 + years is 1st generation Italiana, and she loves it. I recently bought 5 hardcover copies and one of the newer paperback for relatives and friends. The Linguini/pasta and white clam sauce recipe is so very good, that professional chefs have begged for the details. I use the Costco canned baby clams from Thailand - As good as any I ever harvested in New Jersey as a child/adolescent in the '50's. I realize that you can get most on line, but this is a treasure book! |
