This cookbook is worth even if you only make the Wheat Berry Salad with Wild Rick and Orzo. It's an extremely heathly dish that's perfect for outdoor parties and potlucks -- no mayo to spoil. The Mix-in-the-Pan Cake is a nice recipe that brings back memories of the old Snackin' Cake product -- a classic of the 1970's that was a family favorite when I was growing up.

Saw this book in a library when I was on vacation this summer. Good value for the money on Amazon. Recipes are scrumptious, easy to follow. Beautiful photos.

I love this cookbook. The Mediterrean Barley Salad is always a hit at potlucks. There are many healthy recipes to choose from and there's good variety for those nights you want something a little different. Especially like the Mix in the Pan Cake and One Pot Brownies.
