This is my kind of cookbook with the focus on main meal entrees for dinner. There are lots of color photographs which always makes a good cookbook even better. The chapters include Hearty Supper Sandwiches and Pizzas; Soups, Chilies, and Stews; Simple Skillet Meals, Satisfying Casseroles, and Main Dish Salads (which I will use more frequently with summer approaching).

So far I've made two recipes from this cookbook: Chunky Tomato-Bean Soup and Tuna and Broccoli Bake. Both turned out well and I'll make them again. I've tagged many recipes to try such as Toasted Philly Turkey Sandwiches, Buffalo Chicken Sandwiches, Cheesy Chicken and Artichoke Pizza, Greek Split Pea Soup, Onion Topped Turkey Divan, and Loaded Baked Potato Casserole.

The recipes aren't necessarily "health food" fare and some may be higher in fat and calories that what is preferable, but any of the ingredients can be substituted with low-fat, lower sodium versions and whole grain pastas can be used. Since I need to watch carbs I can use more meat and less pasta in many of the recipes and add more veggies, or I can make an open-face sandwich using one slice of bread instead of two, etc. I also like that the recipes use regular ingredients that can be found in any grocery store.

The focus is on dinner entrees so breakfasts, side dishes, and desserts are not included but does feature a menu planner with suggested side dishes for the recipes, as well as a metric conversion chart. Each recipe has a suggested variation and has the nutritional information per serving, including exchanges for those following a weight loss or diabetic program using that method.

This would be a great cookbook for a new bride or anyone of any level of cooking expertise who wants plenty of variety for supper menus.

I received a copy of this book for review from the publisher but the opinion of it is my own and was not solicited, nor was a positive review required.

Although this cookbook only has 5 main `chapters', so to speak, it isn't lacking in PLENTY of delicious recipes to try out.

I especially enjoyed the first two pages, where the Betty Crocker teams helps the reader out by giving them fresh ideas with a section called Dinner Dilemma Solutions and Moment's Notice Menu Planner.

The Dinner Dilemma sections walks the reader through how to avoid the Dinner Dilemma by having a well stocked pantry, menu planning ideas, and helpful hints to be a smart shopper.

The Moment's Notice Menu Planner shows how to plan out a few meals for the week that will make cooking dinner a snap.

The rest of the book is packed with nothing but amazing looking recipes.

This week I've got planned a few meals from this cookbook, but the one I'm really looking forward to trying out is the Cheesy Rigatoni with Eggplant Sauce.. YUMMY!!

I purchased the Betty Crocker Big Book of Weeknight Dinners and haven't been disappointed yet. Each is tasty and easy to make and the favor is really good. You don't have to doctor the recipes up at all. I love that they are fast, healthy and tasty. I would recommend this cookbook for anyone, especially for those of us on tight schedules who just don't have the time to cook all day!

Once again, the editors at Betty Crocker have come through for the busy consumer with more than 200 inspired creations. Most dishes can be accomplished within a 20 to 30 minute timeframe, perfect for those weeknights when you are tired and famished but crave something fresh and flavorful rather than another frozen entree popped into the microwave. Many of the recipes offer time saving suggestions and healthy twists and most can be prepared ahead of time. The Big Book of Weeknight Dinners makes it easy to savor delicious home cooked meals every night of the week!

I don't know if I am missing something in the paperback version. I was expecting menus and a shopping list from the reviews I read, but there are none here. There is nothing new or exciting in the recipes either. I really love my Betty Crocker Red cookbook, but this one does not hold a candle to that one. There are a lot of crock pot recipes, if you like those. They are not my favorite.
