Directions
Lentils do not require soaking. Simmer 1 cup lentils with 4 cups water 12 minutes for salads, 20 to 30 minutes for main dishes, drain. Skim the water while cooking. One cup dry yields 2 cups cooked.

Love love love these lentils - they cook really fast and are healthier than beans! Here's a recipe that my even the one eyebrow raisers like:

In a large stock pot cook a half package of bacon ends and pieces, when the bottom of the pan starts to brown and the bacon is nearly done add about 1/3 of a bottle of cheap merlot wine and get the bacon unstuck from the bottom next, chop two or three leeks ( green tops and all! ) and add those to the bacon/wine debauchery that is happening, add your conveniently packaged and delivered (and recently rinsed) Barry Farm lentils. Cover with enough water that the lentils rest under about half an inch of water. Add salt, pepper and herbs de Provence set on a medium low heat - cover for a soup, it should be ready in a little less than an hour- or - cook uncovered for about an hour for a more robust lentil side dish or some bed-for-my-salmon main course action. Quick, easy, almost healthy (curse my love of bacon !) and de-lic-ous enjoy!

I absolutely love these lentils. You get the high protein and fiber that you get from beans, but they cook very quickly. They are a very small lentil. They can be used as a side dish, in soup, and cooled then put in salads. Very versital.

A 1/2 cup serving is about 100 calories with zero fat. You also get 4 grams of Fiber, with is very important in your diet. Along with 6 grams of Protein. Wow, fat free protein!

I have hunted high and low to find these. They are wonderful!! They make the best dips, taste sorta like blackeye peas and look sorta like caviar! Quite the combo pack. Throw in great nutrition and you have it all! Have ordered from Barry farms before and they are quick.

Love black beluga lentils. The quality of Barry Farm's belugas are excellent: consistent size, shape, texture, and taste. Add in free shipping and there isn't a reason to go hunting through local stores to find these lentils or black rice or any of the other uncommon 'staples' I like to eat.

This is the first time I've had black beluga lentils after hearing so much food blog hype about them, and I have to say I'm not disappointed. The lentils are quite small (compared to the red, brown, or green ones I've had before) and have a good, rich, somewhat mushroomy flavor. They were easy to cook and held there shape really well.

I initially purchased these lentils to make Punjabi Sukha Urad Dal. Trying to find these lentils at my local grocer was going nowhere, so to Amazon I went. My dish turned out to be quite tasty and these lentils were stickier and heavier than others, however, that was the intent for what I needed. These are used quite a bit too in Indian cooking and cook in about 30 minutes (if soaked for at least an hour prior to cooking). All in all, good purchase!

Not very much for the price, but does cook up nicely. Not mushy like the regular lentils. Hubby willingly ate the whole bowl with no meat on top. That have to count as a miracle of some kind right?! I would buy more often if it's a little bit cheaper.
