This cheese is slightly crumbly, tangy, I believe it *would* go well with chutney, but it's more versatile than that.

I bought this at a local store for $25 per pound. For that price, I'm expecting a lot. Personally speaking, I like VERY dry cheeses that have been aged for years and are starting to form amino acid pockets that are crunchy. That being the case, Black Diamond let me down. Still, if this type of cheese hits your hot button, you should consider trying the "special reserve" Black Diamond. This venerable comestible has been aged for a minimum of 4 years!! All the things you like about the standard Black Diamond are even more in evidence in the reserve. Perhaps best of all, you can buy a pound of it at CostCo for only 8.99!! Whew.

Bring this to room temperature so it breathes and sweats and you need do no more than cube it and serve. The taste and texture are archetypal cheddar.
Dangerous to have around if you are a cheese-lover...

Outstanding Cheddar Cheese! I had it shipped to my APO AE address in Iraq, what a treat! It arrived in about 9 days, and even though it was a bit warm outside, the cheese it the Styrofoam container with cold packs was in great condition. It was a bit oily I guess and soft, but I placed the vacuum sealed 1-lb blocks in the fridge overnight, and they firmed up great. Started slicing and sharing with all. Great sharp flavor, buttery and a exactly what you'd expect from aged cheddar cheese. I've used it on sandwiches and with slices of turkey pepperoni! Of course a few slices alone are heaven for cheese lovers! I will order again this outstanding sharp cheddar! probably try 4-lbs nest time, 2-lbs goes fast when ya share! Semper Fi`

I bought this at a local store for $25 per pound. For that price, I'm expecting a lot. Personally speaking, I like VERY dry cheeses that have been aged for years and are starting to form amino acid pockets that are crunchy. That being the case, Black Diamond let me down. A number of 1-2 year old cheddars are already starting to develop this characteristic, but this cheese is not. It has a very balanced, somewhat sharp, smooth flavor and is quite good, but not nearly as sharp as I'd expect from a cheese that bills itself on the label as 'very sharp.'

Nevertheless, I would give it 4 stars for taste, but an overall review of 3 due to price and comparison to other cheddars in its price range. I certainly won't have any issue finishing the half pound I bought, but won't buy it again unless for company that I know doesn't like super sharp cheese.

Overall, save your money and buy generic block 'sharp' cheddar. It's just as good and half the price. (I do not mean Helluvagood or other mass produced grocery store types, those are just......horrible).

I love this Cheddar. It is pretty sharp, a bit crumbly, and tastes great with a simple cracker ( add a little bit of "old" balsamic for a real treat ). It is certainly much better than your average supermarket cheddar, but not the best I have ever had. If your wallet allows it try Quebec 7 Year Vintage Cheddar ( also available from iGourmet ) or Cabot Old School Cheddar ( aged over 5 years and I could only find it at [...] ). They would both get 5 stars from me, but 4 stars for the Black Diamond means it's worth buying.

This is the best I have ever had, It is a bit expensive when you buy it online as you have to pay shipping. Check in your area to see what stores carry it. But ... if you want to send this as a gift to any cheese lover you know, This is the one.

I have tried numerous cheddar cheeses but this is the best tasted in over 30 yrs! You will not go wrong with this. Too bad can not get the 10lb version anymore from amazon it would last a long time.
