Buckwheat with milk is my favorite meal start from early childhood. I born in Ukraine and Buckwheat is very different over there - it's pretty brown seeds. Not light green like this one. Even without roasting it was delicious tasty and smells so fine. But, because I am now too far from the Ukraine and Russian stores too expensive for me I guess I have to add anything else...

I was originally hesitant to try these given the mixed reviews. I really love buckwheat and use it in a variety of different ways including as a hot morning cereal, fresh ground for homemade bread and pancakes (nothing beats fresh ground buckwheat flour made into pancakes with 100 wholesome maple syrup) and even in a type of pilaf. After re-reading a few things it appears there are some misconceptions about this product...

1. - This is indeed raw and whole grain groats. If you are searching for roasted/toasted buckwheat you need to keep searching. If you are searching for partially ground, flaked, rolled, etc you also need to keep looking. For those that are familiar with Kasha - this is not roasted nor partially broken...when cooked it will turn into little round balls rather like tapioca.

2. Not mushy...try this a few times to get the cooking correct. I eat this for breakfast with a little honey several times per week and it is excellent. No gluten, lots of nutrition including most essential amino acids, very little fat/calories...it's nearly the perfect food. Bring the water to a boil, put in the groats, reduce the heat and allow to simmer for a few minutes. Keep an eye on it - the buckwheat will "puff" and become soft. After a few attempts you will learn to recognize the preferred consistency that suites you best.

3. Superb nutrition & versatile. Buckwheat should be considered a super-food it's so nutritious without all the other garbage. It's also incredibly versatile - from a hot breakfast cereal (boil and use a touch of honey) to fresh ground for bread (bread makers, use about 1:4 ratio with fresh ground whole wheat...since this has no gluten the wheat will allow it to rise while the buckwheat adds essential nutrients the wheat lacks. For those with a gluten intolerance, buckwheat is a superb alternative and can be used to create bread without any gluten but you will need to use an enhancer to help it rise.

I want to comment on a previous review which asserts that Bob's Red Mill Organic Whole Grain Buckwheat Groats Raw, 16-Ounce Packages (Pack of 4) are misadvertised and are not a raw product. I beg to differ please.

These wonderful groats are in fact RAW. I buy them often from Amazon and being a raw foodie, sprout them before consuming. I've never had a problem with these groats not sprouting and they would NOT sprout had they been steamed as the disgruntled reviewer claims. They seem to green up after soaking and will sprout quickly ~ as a matter of fact, just yesterday I made some buckwheat brownies and cookies for Christmas treats and the groats sprouted in 12 hours! (Of course I live in Florida and the warm weather may be a factor). By the way, my treats turned out incredibly delicious and I give credit to the quality of the Bob's buckwheat.

I love this product, especially that it is organic, and trust completely that if Bob's Red Mill says they are organic and raw, well then they are.

I also want to add that when purchased at Amazon, and in particular at Subscribe and Save, they are a real value. They are so much cheaper here than at my local health food store.

i have purchased this product and sprouted the groats - nearly 100% sprout within a day or two - these groats are definitely raw

They have sprouted in 10 hours! I have soaked them in room temperature filtered water for two hours yesterday night. After that I have rinsed them and scattered on bottom of a large pyrex glass container with a lid a little ajar. This morning 10 hours later most of the groats have already 1-2 mm shoots. This product is real!

By the way, any Buckwheat can become mushy if you don't know few simple secrets. I would love to share: First - water should always cover the seeds 2 fingers above (horizontal position =)
Second: add little of salt to Buckwheat in the water and bring the water to a boil FAST, then
reduce the heat to minimum and allow to simmer for not a few minutes but until ALL water will
be inside of the seeds.
If you put too little of water - you will eat dry, raw and possibly burned kasha.
If you put too much of water - you will eat wet and mushy kasha.
And , if you cook in the BOILED water you will get all combinations above.
Good luck and enjoy. It is food from the Heaven.

I have ordered on 2 separate occasions the 4 pack boxes. Both had terrific groats but the first shipment one of the 4 packs had broken open during shipping and had spilled its contents. I contacted Red Mill and they immediately replaced the spilled pack. That's great service. I'm on the site again to place another order. Repeat business is the best recommendation.

I soaked these and dehydrated them to make a raw buckwheat cereal. They're great! I serve them in a bowl with coconut milk, sprinkle them on cut fruit, and pop handfuls into my mouth as a crunchy snack. Very versatile and tasty.

The cooked grains are soft and creamy. Taste somewhat between a risotto and a barley. Great taste. I believe they will easily capture flavor from what ever they are cooked in, or added to. I used them as a rice substitute and they taste great.

Cooking time is about 4-5 minutes. Wonderful grains - would definitely order again.


Here's a cooking tip: For a wonderful but healthy smooth taste, add some almond oil on top!

Pretty much like all things from Bob's. . . This is no exception and it might require altering your cooking method over other brands, types or sizes of Buckwheat - but it works. Toast the grains with an egg in the skillet, add 2 cups boiling stock/liquid and let it steam on the stovetop for 20-30 minutes, then add some veggies &/or meats, onions/garlic, etc. Even great with curry powder or tex-mex style as well.
