I use it in combination with corn meal when I make corn bread. It makes a nice product that is easier to chew and is more pleasant for my mouth. I have mouth problems because of Sjogren's Syndrome causing my mouth to be very dry. Others that have eaten the corn bread I make this way really like it too.

If you read the contents of cornmeal mixes, you will find wheat flour as one of the ingredients. If you are sensitive to wheat products or gluten you avoid these mixes. So, what to do! Use Bob's Gluten Free CORN flour. It is finely ground, and can be easily substituted for plain, all purpose flour in recipes. It can also be uses to make corn tortillas. Please note that it is yellow, but that is not a problem to me and makes it a little healthier. Here's to good eating!

I use this flour for coating fish, etc. and it does a great job. I have also baked a little with it and although you need a mixture of gluten free flours to get an "all purpose" flour, this is good. It would be wonderful if Red Mill made a combination flour at a more reasonable price that could be used for baking cakes and other things so that we consumers would not have to buy three different flours every time.

The fact that this product is not organic is an advantage, in my opinion, because the scientific evidence appears to indicate that the "natural" chemicals used by organic farmers (such as rotenone, pyrethroids, copper sulfate, and cow manure) are worse for human health than the man-made chemicals used by conventional farmers (such as organophosphates, glyphosate, and 10-20-20). Also, organically farmed plant-source foods have been shown to carry a higher risk of contamination by pathogenic E. coli, pathogenic Salmonella, pathogenic Shigella, and cancer-causing mycotoxins than conventionally farmed plant-source foods. [Organic farmers tend to tolerate greater insect damage to their crops and this directly causes higher levels of mycotoxins from pathogenic molds]. Organic farmers regularly and intentionally make their farm soils permanently toxic (with copper, a pro-oxidant and toxic poison) and cause toxic environmental runoff (with copper). Organic farming has also been shown to cause deforestation of virgin forests, excessive depletion of water reserves, lower fruit and vegetable consumption among poor families, and increased instances of fraudulent food marketing.

I enjoyed eating this product by pouring boiling hot water over it and stirring very well to melt away the clumps. It tasted just as delicious as - and looked exactly like - genuine mashed potatoes but with a bright yellow color, even though I did not add any butter or margarine.

All corn is gluten-free because "gluten" is just the protein from wheat, barley, or rye. Therefore, "gluten-free" just means that this product was not processed in a facility that also processes wheat, barley or rye. Some people are allergic to gluten. I didn't buy this product because it is gluten-free.

I use a variety of gluten free flours in my own pancake mixtures, or in baking. This flour has a delicious flavor, a nice texture, and mixes well. I up the protein value by adding some quinoa flour, or even buckwheat flour for a different taste.

I couldn't find the fine grid in my supermarket, but Amazon came through! I use this flour in various recipes to replace semolina. Everything tastes just as good. The fine grind gives foods a smooth texture.
