It may be confusing to some who read reviews of this product to come across statements that it takes 20-30 minutes to cook Polenta. For those unfamiliar with the Italian dish called Polenta, it is not to be confused with Grits. They both begin with the same basic ingredients (water and Grits/Polenta), but the recipe for Polenta (it can be cooked many ways, including frying) on the Bob's Red Mill package starts off very similar to cooking Grits, but then calls for setting the mixture aside in a bowl for ten minutes until it becomes fairly solid and can be cut into thick slices which it then recommends covering with one's favorite sauce. This lengthens the preparation time considerably.

Just above this recipe for Polenta are simpler directions labeled as "Cooking Instructions For Cereal" (AKA Grits). This recipe calls for 3 parts water to 1 part Corn Grits. The directions say to bring the water to a boil, add the grits, reduce heat, and cook for 5 minutes. If a person is cooking Grits, it takes no longer than 5 minutes, and this is without pre-soaking the Grits/Polenta overnight as some of the reviewers suggest.

Taste

As a native of the state of Georgia, I have been eating Grits all of my life. The common brands found in the stores here include Dixie Lily, Jim Dandy, and Quaker Instant Grits. I have consumed prodigious amounts of all of these brands, and have found no significant difference between them. I became concerned about the GMO (Genetically Modified Organism) Corn used in these products, as there is a considerable body of research that reveals the serious negative impact GMO's have on human health. This led me to Bob's Red Mill Grits which are Organic, and hence do not contain GMO corn.

I have turned into a polenta nut of late. The bag states it takes about 25 mins to cook, but I don't agree. Within 15 mins or less, it's ready. I use a 4-1 ratio of liquid to polenta. So one cup of polenta for 2 of us (with a little bit leftover), works. I use 2 cups of broth and 2 cups of milk, bring to a boil, add polenta, lower heat to simmer and stir often, not continuously, not necessary. At end, shut off heat and add parmesan cheese to taste and a few dabs of butter, whisk in, like ending a risotto. Yummy. A different alternative to mashed potatoes and rice. You can even stuff peppers with it or scoop some chili over it. It's great for braised meats w/gravy, layer that on top. Comfort food at its best. I like the mouth feel, it is not like baby food, it has some texture and creaminess combined.

Yes, you can buy polenta in bulk from the natural-foods store, or your local grocery. After dealing with uneven quality for years, finding "tiny things" crawling in the grain was too much for us. With Bob's you are certain of a great product.

BTW, if you are ever travelling through Portland, Oregon, make sure to eat breakfast at Bob's Red Mill restaurant!

Who knew there was such a big difference in something as simple as grits? We have always used the quick-cooking type that you buy at the grocery store, and only half of my family eats them. However, everyone LOVED the Bob'S Red Mill Organic corn grits...even the self-proclaimed 'grit haters'. We will not go back to the quick-cooking type!! Definitely worth the try!!

I'll admit, I don't do the cooking in my house. I do some of the eating, though, and these grits are YUMMY! They are the only brand my fiancee (the house chef) buys and he cooks grits a few times per week. We like them with a bit of Earth Balance and some Himala Salt.

Living in area where grits are not common, I'm glad to be able to have them whenever I want and however I want (sometimes, when there's extra, I put them in the fridge for the next day - still just as yummy!). My guy likes to add nutritional yeast to his grits, for a B-vitamin boost and a cheesy taste!

PS - I had a problem with the shipping of another Bob's Red Mill product and I called the company. They were very friendly and provided me with excellent customer service.

So, I recommend both the company AND it's grits!
