Spelt has a high water solubility, making it possibly easier to digest for those with a wheat intolerance and with higher amount of copper, iron, zinc, magnesium and phosphorus makes spelt a better flour than its distant cousin the wheat with more of a nutty, slightly sweet flavor. Native to Iran and southeastern Europe Gluten spelt breaks down more quickly than wheat gluten.

I soak the berries overnight, drain, saute in olive oil for few minutes until slightly toasted which bring out the nutty flavor of spelt, add water, tomato paste, carrots, corn and turn up the heat. In the end I add spinach. Stewing tomatoes for a half hour increases the cancer fighting lycopene content by 35 percent. Cooking also unlocks another nutrient, beta-carotene, in corn and carrots since heat breaks down the fibrous cell walls, releasing more of these antioxidants. The same goes for spinach but then need to get vitamin C from something else since that is the first vitamin which is depleted with heat. I sauté lots of onion separately then in ten minutes I add paprika, cumin, dill weed, gram marsala, crushed red pepper, turmeric, many other spices and lots of crushed Christopher Ranch garlic 2 x 2 Pound Fresh Garlic USA California Heirloom Monviso Gilroy Finest (4 Pounds Total) mix it well and add to the pot, mix and let it sit without heat for five minutes.

I used these berries to grind my own spelt flour after only baking with it once. The quality is very good and tastes much better in my baking that buying the flour already ground. I do wish the packages came in a larger size, but definitely not a deterrent. I will buy these again. Thanks for providing my family a non-GMO product.

I like spelt and kamut berries. They taste so much better than regular wheat.
We sprout them and use coffee mill to grind them (mixed with dry flax seed to absorb the moisture) as our breakfast serial.
Add a little bit of hot water, a teaspoon of honey and a few soaked overnight walnuts - you will not want any store bought stuff.

haven't purchased any other spelt berries but if my meager research serves me well, spelt is top of the grains for protein content and as I'm trying to lose weight, pinch pennies and hinder the planet as little as possible it meets my needs. I sprout it before cooking or milling into flour to minimize the "ill" effects of wheat. Spelt is now the standard flour in my larder.
