I have super picky kids and I have an allergy to gluten. So here is what I do. I whip out my favorite cook book - 47 Irresistible Recipes for Baking with Coconut Flour by Donatella Giordano - and then for one of my kids I cut the coconut ingredient in 1/2 because they are picky about the flavor. For me and the other kid, I use the recipes in full. I'm also just learning about the Paleo diet - not sure if I will have to follow that or not, but at least I know this flour can be used if my allergies get worse and I do have to go that route.

I cannot stress how much I completely have fallen in love with this coconut flour! I am slowly converting my family into eating clean-raw, this flour is a great substitute to flour in baked goods! Do your research and you will see how easy it is to bake with this flour. Here is one of my recipe's for those health nuts out there that have a sweet tooth!

Ingredients (8 x 8 pan)
•1/2 cup dark chocolate chips (preferably >70% cacao and organic)
•2 tbsp cocoa powder
•1/4 cup coconut flour
•1/2 tsp fine sea salt
•1/2 tsp baking soda
•1 cup finely shredded zucchini, packed (about 1 1/2 small zucchini with skins)
•1 egg (free run)
•1 tsp vanilla
•1/4 cup nut butter - I used sunflower
•2 tbsp melted coconut oil
•1/4 cup plus 1 tbsp agave nectar
•1/4 cup chopped walnuts

Instructions
•Preheat oven to 350 degrees.
•Put the 1/2 cup choc chips in the food processor and pulse until they are the consistency of sand (course). Then add remaining ingredients, except walnuts, and pulse until fully blended.
•Put into a 8 x 8 baking pan greased with butter.
•Top with chopped walnuts. Bake for 35 minutes.
•Let cool before slicing. I dare ya.
•Serve and enjoy!

This is a great supplement to smoothies and to anything you wanted to add coconut. I sometimes eat a spoonful of coconut powder. It tastes that good. The reason i gave four stars is the package is brittle and broken in the shipment. They should think about a package that doesn't tear off during shipment.

I was a quest to eat healthier and I bought this to try. It wasn't what I expected. The pros are that it's high quality flour and well-packaged. The cons, for me, is that you can't use it like normal flour. You have to use it in a specific ratio to your other flour, oat flour in my case, plus add some water. It was too complicated for me and every time I used it I ended up ruining what I was baking. I'm not really sure why someone would buy this instead of a product that 100% replaces white or wheat flour.

This is the first coconut flour I've tried, and it does what it's intended to do - work in recipes for my low carb/ketogenic diet. I made some pretty decent brownies with it.

It doesn't have a coconut flavor to it, and the texture isn't like most flour, it has a different style of clumping.
