Potato Starch is used as a thickener for sauces, soups, and stews. Potato starch tolerates higher temperatures than cornstarch when used as a thickener. It's a natural way to add moistness to many baked goods. A recipe for wonderful pan gravy is on the label.

This brand of flours are highly recommended and good quality, I have never used any potato starch before but this one seems soft and powdery. This is a pantry staple if you have to have a gluten-free diet and you can even use it for regular cooking. Best if refrigerated by the way.

Alright, peoples...in GF baking this stuff is fabulous!!! But you want the best part???....drum roll... it replaces cornstarch tsp for tsp! Now for you nightshaders... go with Arrowroot, same results, but no potato. I on the other hand can have potato and Love love love it....but if you are cooking gf free then you need 2x starches preferable this and tapioca mixed... Tapioca tends to be really dense though, so don't use too much or your end product will be dense/gummy...where potato makes it a little more light/airy. ...oh and as a side note, I'm Irish, I love me some potatoes, so maybe I'm just a little bias, but if you need to use Arrowroot, just mix it half/half with Tapioca, because Arrowroot tends to lend a pepper taste to foods used in large quantities...1/4cup or more
