I use semolina and unbleached all-purpose flour when making a batch of pasta dough. 100 grams of semolina to 200 grams of flour. I add this to the food processor box along with a teaspoon of salt and pulse it for about 30 seconds. Then break and add three eggs on top of the flour and drizzle about one teaspoon of extravirgin olive oil on top of that. Then turn on the food processor and let it run until the dough forms and begins to clump in the box. Remove the box from the machine and invert it onto a work surface. Clean out the box and the blades. Now knead the dough until if forms a firm smooth mass. This takes about three minutes. At this point the dough should rest. Wrap in film. After it is rested you can divide the dough in half, wrap it in film and refrigerate it for future use. The total amount of the dough will weigh about 400 grams. This is enough pasta for four people. So dividing it you will have enough for two people.
To make the pasta use either a pasta machine or the pasta rollers, cutters that fit your mixer or the old fashioned way is to roll it out with rolling pin. To cook fresh pasta use an abundant amount of boiling water that has been salted to the taste of sea water. Dump in the pasta and stir well. Boil for about three minutes. Drain and mix with your sauce of choice.

I believe this product is of equal quality of some the Italian imported Semolina flours. I am one who does NOT use egg nor white flour to mix in my pasta dough and I find this semolina to be extremely pliable. Not to mention the price here! I love the Italian-imported flours but it becomes way too costly because of the shipping. The fact that Amazon is offering FOUR BAGS of this flour for just over $12 is a steal!!! I live in New York, and when you want a high quality product, you usually end up having to go to a foo-foo upscale gourmet store where you'll end up paying an arm & a leg. I found a 1 lb bag of semolina for roughly $6.00...absurdity! I think this is one of the items where I'll take advantage of the re-order feature because it's simply more economically effective considering I don't want to purchase manufactured pasta anymore. Can't say enough about the quality of this flour...really all I use in my dough is semolina, water, salt and a tbsp of olive oil- makes perfectly flavorful, delicious pasta!!

I used to make my own pasta and this flour is really good and tasty. I mixed 50% of this with 50% of wheat and it makes the pasta easy to mold and make any pasta type.

This works great! I followed the recipe on the back of the bag, except I put all the ingredients into my breadmaker, and let it mix/knead it. Use it in my Atlas Queen pasta maker, and WALLAH!!! I think this made the best homemade pasta we've ever made. At least that is what my children told me. We had so much fun fixing an enormous batch of pasta together. We split the flour types that were used: 2/3 semolina, and 1/3 regular white unbleached flour. It keeps the price a little lower, however purchased in bulk this way was a very cost effective way to have the good pasta. This flour was approximately $3 per 24 oz package through amazon when I bought it, the EXACT package was $5.79 at our grocery store.
