I use this flour to make Păo de Queijo, Brazilian cheese bread. For years I've used Yoki both Polvilho Doce - (Sweet) and Azedo (sour) as this was the way I learned whilst living in southern Brazil.

When I had a difficult time finding these products (my local Brazilian store downsized their inventory), I found this at a whole foods retailer. I really hesitated to use it because it's not easy to for me to change a tried and tested recipes. This is especially true when feeding a very picky little guy.

I am delighted with the results of this flour. It actually out preformed the other brand and I cannot tell, nor can any member of my family tell the difference. It rises better and it's a bit more flavorful. I've never had a failed batch of cheese bread from Bob's Red Mill. It might be because it's fresher. Another reviewer suggests keeping this refrigerated. We keep one canister out on the cupboard and the rest we freeze. We go through it pretty quickly in the canister, we've not experienced any real issues with the one in the canister on the cupboard.

Our family isn't necessarily "gluten free" but "wheat free" and processed foods free. We dropped processed wheat flour years ago out of our diet. Tapioca flour and Păo de Queijo was the only bread we could eat until I started getting better ideas from a fitness board. If one is trying to drop processed flours, wheat or gluten, or become "low carb" this stuff comes in really handy.

Children love cheese bread. It's gooey and cheesy and warm. There are several variations on the internet. There are just as many variations in Brazil and with each padaria.

"Pao de Queijo"

4 eggs
3/4 cup corn oil
1 1/2 cups whole milk
1 teaspoon salt
1 1/2 cups sour tapioca flour (azedo)
1 cup sweet tapioca flour (doce)
3/4 cup shredded parmesan cheese

Preheat oven to 425 degrees. Combine all ingredients in a large bowl. Mix well until
batter is smooth. Lightly grease a 12- or 24-cup mini-muffin pan or small dariole molds.
Fill each muffin cup three-quarters full. Bake for 15 minutes or until golden brown.
Breads should be crisp on the outside and hollow on the inside, like a popover. Serve
Warm. Makes 48-60 Puffs.

When purchasing this from Amazon directly and having a subscription, it's very economical and much less expensive than whole food retailers. I think I'm saving around $3-5 a bag. It also arrives in a very timely manner.

Tapioca Flour has become an essential ingredient in my household. I use it in almost all of my gluten free recipes for baking, both for sweet treats and breads/pizza crusts. I don't know how it does it, but it certainly adds a taste that I love.

I also love how I can get 4 bags at once and it is quite a bit cheaper than in the store.

I'm amazed at how few stores stock this on the shelf, given the widespread use of tapioca flour as an ingredient in GF recipes. I know the BRM all-purpose GF flour includes tapioca, but it also has some bean flours mixed in. And when a recipe specifies different types of flour, you'd do well to use that (or find a flour of a similar weight and texture). I would have signed up for the recurring purchase, but I'm fairly new to GF preparations and need to assess how long it takes me to consume each type of flour before putting myself on a schedule for ordering it.
