Bob's Red Mill Vital Wheat Gluten Flour - 22 oz. (1 lb 6oz / 623g) Bob's Red Mill Vital Wheat Gluten is the natural protein found in wheat. It contains 75% protein. A small amount added to yeast bread recipes improves the texture and elasticity of the dough. This is often used by commercial bakeries to produce light textured breads, and can easily put the home bread baker on a par with the professionals. Vital Wheat Gluten can also be used to make a meat substitute known as seitan. Currant Nut-n-Honey Cinnamon Bun Bread from the Bread Machine Recipe 2 Tb Vegetable Oil 10 oz Water, room temperature 3 Tb Honey 1 tsp ground Cinnamon, Saigon (Premium) 1 tsp Sea Salt 1/2 cup chopped WALNUTS BAKERS PIECES 1-1/2 Tb Vital Wheat Gluten 1/2 cup Triticale Flour 2-1/2 cups Unbleached White Flour 1 cup Regular Rolled Oats 1/3 cup Currants 2 tsp 1/4 Active Dry Yeast Add all ingredients in the order suggested by your bread machine cycle and process on the basic bread cycle according to the manufacturer's directions. Let loaf cool for 15 minutes before slicing. Add currants at the beep. Oven Baking Option- Unplug the bread machine at the end of the mix cycle. Punch down by hand after the first rise to keep the dough from rising too high during the ensuing rise. Grease a 2-1/2-3 quart glass baking dish; shape the dough to fit the dish and put it in a warm place to double in size (about 45 minutes). Bake in a 365F oven for about 25-20 minutes. After making bread for the first time and it sinking. I did some research and discovered that adding Vital Wheat and Gluten Flour would help the bread from sinking, so I decided to buy some, and I am glad I did. It not only keeps it from sinking it makes the bread light and airy. Less is more, I discovered that 1/4 tsp for 1 pound of bread works great. It does make a difference

It's a great product which lightens, yet gives body and spring to my homemade bread. I didn't give it 5 stars because it is awfully expensive, but certainly Amazon offers it at the best price I've seen.

I started using Wheat Gluten about 10 years ago for Whole Wheat, Rye & Pumpernickel Bread and now I use it in every loaf of yeast bread that I make. My gauge is 1 tsp. of Vital Wheat Gluten for every cup of flour. It goes right into the bread machine with the yeast and I get great results each time no matter what flour I am using.
