Boker makes its ceramic knives in Germany from ceramic supplied by Japanese manufacturer Kyocera. A spirited debate continues about these high-tech ceramic knives. Some worry about fragility. Kyocera insists that zirconia (the blade's material) will not shatter, although the company advises against cutting bones or prying with the tips of these knives. Others praise the blades' sharpness and accuracy. Only diamonds beat zirconia for hardness so these blades are extraordinary sharp and resistant to dulling. Zirconia costs more than steel, but the benefit is that you don't have to use a sharpening steel and you can avoid paying a professional sharpener for years. Zirconia also doesn't stain or rust and it is naturally non-stick, which makes cleanup easy.

With its soap-white blade and black handle, Boker's ceramic chef's knife is dramatically beautiful. This is a Japanese-style chef's knife, which is the kitchen staple for Asians that the French chef's knife is for Europeans. The knife has a low tip with a broad blade and a slightly curved cutting edge. Because the edge is less curved, the knife provides little rocking action; however, for straight-down slicing and precise chopping it's superb. Lightweight but not flimsy, balanced in hand, and super-sharp, it feels like a surgeon's instrument--and it cuts as smoothly and precisely as one. The fiberglass-reinforced handle is virtually unbreakable and the handle's curved shape and thumb-groove provide a firm, comfortable grip. This ceramic Knife opens a new world in cooking. It's light weight, and sharpness actually makes prep work in the
kitchen something to look forward to. It is actually fun to use and the light weight feels like like it floats in your hand.
In slicing tomatos, it is possible to make the slices as thin as 1/32th of an inch, with total control. In decorating with
carrots, radishes, or any vegatables, and apples , oranges and all fruit, your creation is unlimited. This type cutting
equipment really spoils you from wanting to use other regular knives. I think we will see more of this type equipment in the future to match all other type knives found in any complete cooking or kitchen area. I notice some of the Master Cooks on the Food TV Network are already using them. For a new experience in the preperation of
food I would recomend these ceramic cutlery highly. Ray ...

This knife is sharp, amazing see thru slices. A notch above the Boker Titanium knife. It comes with a sheath, which I use everyday to protect it. I use it to cut everything, from twigs to potato chip bags. It keeps it edge.
