Pretty, but not useful,

What a gorgeous knife. Unfortunately, it does NOT keep its edge as advertised (my Henckels are much sharper), and the lovely rounded handle makes it impossible to hold the knife while peeling veggies (assuming you peel an apple, for instance, while holding it). Try Henckels 4-star instead.

I have to say that I don't think you will find any professional chefs using these knifes, but for my kitchen it's great. I love Titanium and that plus the blue color matches my kitchen. I am familiar with Boker too. I think you will be suprised by how light it is (not something a pro would want). I'm sure you can find better knifes, but if you want cool, this is cool.

I bought this with high hopes, alas the reviews I had read were correct, and no amount of sharpening could overcome the inherent softness of the metal. Titanium is a great lightweight, abrasion resistant material that won't rust, but in it's alpha form is just not very hard, and hardness is what is needed for a sharp cutting edge. The newer beta phase titanium knives are supposed to be a vast improvement, don't settle for anything less in a knife.

Not the knife I was expecting,

This chef's knife is certainly a perfectly acceptable knife. It is very pretty with its titanium blade. That said, I have been rather disappointed. My husband, ever the gadget guy, has been unable to get an edge sharp enough on this knife to provide the effortless slicing that comes from a perfectly sharp knife, in spite of his continued efforts to this end.The small size of the blade and smaller grip handle also feels limiting for quick chopping and dicing. I have been unable to get that great rocking action that I enjoy when I really get a knife going. Actually, the size of the knife makes this a perfect utility knife, and that has become my use for it. For a chef's knife I prefer a higher performance knife that allows me to speed through my cutting and slicing quickly and effortlessly. If you are looking for performance, this isn't the knife for you; however, if you need a good utility knife with a bacteria-resistant surface that holds an edge nicely, I would definitely recommend this knife. |
