5.0 out of 5 stars Bosch Concept MUM 7100UC 700 watt stand mixer

For the price, this should be a top of the line machine. I bought it for my wife as a replacement to an old machine that had worn out after many years of service. We choose this paticular mixer for two reasons. First, my wife wanted a single machine that would perform mixing, blender, and food processor all in one. Second, this machine is the only one that we could find that would fit in the appliance garage on the counter in the kitchen. (The others were too tall.) The Bosch MUM 7100UC is a good machine that performs all of the operations well. However, there are three things that we found objectionable. First, the machine makes quite a lot of noise which comes from the motor base. The noise is excessive for all operations. Second, the mixer bowl and blender require an excessive amount of force to make them attach to the motor base. Third, the attachment between the motor base and the mixer bowl and blender are made of plastic, and they show signs of wear after just a few weeks of use. This is a concern because I'm not sure how durable the machine will be. What we do like about the machine is that it looks very nice and modern with a sleak design. Since the machine is very pricey, we expected the best without any negative aspects.

When my former stand mixer failed to hold up to knead dough for 2 loaves of bread, I invested in the Bosch Concept mixer because of its 700 watts and impressive German engineering. The Bosch Universal mixer also has 700 watts and has proven to be an excellent mixer over the decades, but the newer Concept model has an assessory I wanted--an ice cream maker. I decided to buy a mixer that would handle several assessories I would use. With all the ground beef recalls recently, I wanted to grind our own hamburger meat. Adding the berry press to the meat grinder makes de-seeding blackberries for jellymaking a breeze. The citrus juicer is inexpensive and quickly makes orange juice or lemon juice for lemonade . The plastic bowl has held up well under almost daily use for 2 years, and it has a lip that makes holding it and pouring from it easy. The bowl snaps into the base easily. The blender is the most powerful one I've ever used, but my main use is to make bread dough for 1 to 4 or 5 loaves of bread and to make wonderful angel food cakes or chiffon cakes. I also make cookies and other cakes, but if I did not make bread at all, I would probably consider other machines. The machine is noisy when the ice cream maker is attached, but for just mixing, the noise level seems to be the same as any other mixer I have used.
We are most pleased with this mixer and would buy other Bosch products based on its performance.

I've been very pleased with my Bosch. After researching my options, I went with the Bosch for its power, capacity, reputation, and design. I've found that it easily handles large batches of dough. The mix-from-the-bottom design makes it easily to add ingredients while it is kneading the dough. The Bosch kneads well when conditions are right (you can't just dump in the ingredients and let it go). But learning what those conditions are takes practice. One tip: start with an overly wet dough and gradually add flour. It seems to knead best when the dough rings the center column, when this happens increase to speed setting 2. It is fairly loud, but most stand mixers are. It cleans up well, stores nicely (you can fit all the included attachments in the bowl), and has the look and feel of a high-quality product. I haven't used the blender or beaters yet.

I highly recommend this product and don't regret my purchase. Serious yeast bread bakers shouldn't limit their options to the Kitchen Aid series. I didn't have good luck with my Kitchen Aid Classic mixer. I didn't give it 5 stars due to the learning curve for kneading...but overall I'm very pleased.

5.0 out of 5 stars Heavy Duty Mixer, November 18, 2002

You want power to make bread dough or oatmeal cookies dough? You know how hard to mix heavy dough with a wimpy machine (300 watts and below) especially for large batches of dough. I highly recommended this mixer (machine) for all types of bakers out there. I purchased my machine last year and have used it constantly. I don't think I would purchase another Kitchen Aid mixer unless it was updated to 700 watts of power, then I would lose my counter space. I just love the power behind my Bosch MUM 7100 UC. It does get noisy but then so does Kitchen Aid. I stored my machine in one of my wider kitchen drawer.
With the holidays coming up grap this machine to make all your holiday goodies. It can whip my eggs, chocolate mixes, and butter so smooth. Sure, other mixers can do the same but the difference is when you start adding flours, baking soda, and oatmeal, etc to your mixer does it slow down? Well, my Bosch keeps going, going, going.....
I would like to see Bosch make a smaller bowl. I do recommend you purchase a second bowl for other usage like mixing meat products.

5.0 out of 5 stars Best mixer on the market, December 1, 2002

This review is from: Bosch MUM 7100UC 700-Watt Stand Mixer Kitchen Machine (Kitchen)
I purchased this product a few weeks ago. Bread dough is kneads as fast as cake batter. Nothing slows it down. No need to let the dough rise twice - kneads so well that one rising is all that it takes. Monster cookies, pumpkin pie, all came out great using this mixer. I got the ice cream maker - works just wonderful. Ice cream in 15 minutes! I also purchased the food processor - works just great. This is the best mixer I have ever owned. All items store great and have lids so items don't get dusty between use. I'd recommend this mixer for the serious cook. This mixer is just wonderful!!

5.0 out of 5 stars Great Mixer, I love it!!!!, December 10, 2003

This is a wonderful mixer.

Holds alot of ingredients. I can make loads of cookies and breads with only one recipe!!

I like the convenience of the attachments and they don't take up as much space as seperate machines.

Make sure you order cookie/batter whips (not available on Amazon) if you are making cookies. The wire whips will not work on cookies and the dough hook does not work well for them either.

I bought the stainless blender, food processor and citrus juicer attachments as well as the cookie/batter whips.

5.0 out of 5 stars Love My Concept7!!, June 28, 2004
This review is from: Bosch MUM 7100UC 700-Watt Stand Mixer Kitchen Machine (Kitchen)
I received a Concept 7 for my birthday this past May. It's powerful, sleek and stores nicely. We purchased the model with the heavy duty American dough hook and am quite pleased that we did. It easily handles large amounts of dough (I make 6 loaves of 100% whole wheat bread at a time). We haven't had any trouble getting the attachments on the base. They go on easily with little or no effort. Clean up is a breeze. Overall, this is a fantastic machine and I would recommend it to anyone.

4.0 out of 5 stars We love this machine except for two tiny problems, May 3, 2005
This review is from: Bosch MUM 7100UC 700-Watt Stand Mixer Kitchen Machine (Kitchen)
I purchased the bosch concept 7 with blender and food processor in March 2005. I think of something to make in it everyday. It came with the european dough hooks which some say are useless but my children are all raised so to make bread for just my husband and I it works great. However only making two loaves made me wish the bowl were smaller. Also even with a small batch the dough does work up under the center part that covers the shaft that the hooks attach to. It also worked into the center drive post. No big deal but I was surprised, it wasn't engineered a little tighter so that wouldn't happen. We have found the machine very easy to operate, very capable of everthing we've made in it but there are a couple problems we have. The blender blade unit cannot go in the dishwasher so you must take it off after every use. There is a spring loaded handle that you use to tighten it on and loosen it to remove it. It works to put it on but when the machine operates it must tighten it. We can hardly get it off. I don't have as much finger strentgth as I used to so I always need my husband to get it off and he even has problems. I've about decided to just wash the whole blender unit by hand and not take the blade assemble off. My next little thing is the cover for the drive mechanism. It is a large "lid" and very flat. My small hand won't fit over it so I can't grab it and just lift it off. It just sits over the drive mecahnism, it doesn't snap on or anything but I have to use both hands and kind of flip at it. It should be such a simple thing but I struggle getting it off every time. I've thought of buying a sticky backed knob or something and putting on it so I could just lift it off. These things of course have no negative reflection on the machine's usage. The bread I've made so far and the rolls have a nice smooth texture, with the gluten well developed. It mixes up cookies quickly with all ingredients mixed in well. The base unit is smooth and easy to wipe off and clean. The slow start is especially nice when using the blender. The bigger base on the blender makes it very stable. There are many more positives about this unit than these two minor negatives and they are most likely just because we are getting older, but they are frustrating.

5.0 out of 5 stars Why, oh why, did Bosch change the design!!!??, September 26, 2010
This review is from: Bosch MUM 7100UC 700-Watt Stand Mixer Kitchen Machine (Kitchen)
I bought my Concept 7 when my "Professional" KA machine burned out making a double-batch of chocolate chip cookies. I mean, really? I've had this for 7 years now and it is still the best investment I've made. Not only powerful but it is SO EASY to store! I've been adding various parts like the food grinder, slicer-shredder, and so on, but since Bosch has retired this model (mommy's not happy) and issued the new Bosch Universal, items are harder to find. That's how I ran across these reviews.

I disagree that it's too loud. No louder that my KA was and it doesn't smell like burning plastic. My aunt swears by her KA but hers is like 50 years old--when they made the gears out of metal. She still has to make smaller batches than I do but won't switch over to Bosch because she doesn't want to re-learn how to bake. WHAT? At any rate, if you can learn to mix things without having to deal with a bowl-lift (awkward and tight) or the tilt-head (gotta move it away from under the cupboards), go for it.

Oh, and get the cookie paddles--too awesome for words.
