Book Description

September 24, 2004
Food is at the heart of Rio de Janeiro's festivals, mixing native Indian. African and European influences. In Brazilian Cooking Carla Barboza Pinto selects the finest dishes from the 'melting pot', describing recipes passed down through generations as well as contemporary combinations. Newcomers to the cuisine can prepare authentic, tropical combinations with ingredients available at any supermarket. Ranging from quick snacks such as Bit-size Cheese Bread and Rice Cakes to Marinated Garlic Chicken and Couscous, there are hundreds of delicious new recipe ideas. Tangy sauces, juicy oysters and rich gratin go with baked corn, crunchy salads and filling pies, washed down with a Caipirinha Cocktail, Guarana Yogurt Drink or Spiced Mulled Cachaca. Brazil's incredible history is present in every dish from the Native Indian's use of molasses, malagueta peppers and banana leaves to the distinctive red palm oil used by the West Africans in the sixteenth century. Brazilian Cooking is full of fresh, flavour-rich treats which are as pleasing on the eye as they are on the palate. Nutritious and delicious, these dazzling dishes are perfect for any occasion.

4.0 out of 5 stars Tasty Introduction, October 25, 2000
By
Jim Shattuck (San Francisco, CA USA) - See all my reviews
This review is from: Brazilian Cooking (Hardcover)
This beautiful book with striking photographs is a wonderful introduction to Brazilian foods for the uninitiated. Recipies are delicious, if simplified, versions of their mainland counterparts. But there are no dissappointments overall. Great gift for a friend, but perhaps not for your Brazilian in-law.

3.0 out of 5 stars Really needed an editor, November 14, 2011
This review is from: Brazilian Cooking (Paperback)
The recipes in this cookbook are nice, but there are LOTS of editing errors and timing problems that make using these recipes a chore. For example: the recipe for beef tongue in onion sauce. REALLY good dish but the time given to cook a large beef tongue is 20 minutes. It takes 3 hours to boil a beef tongue in Nebraska. I can't imagine it's that much easier in Brazil. Also, the ingredients lists 1 cup of corn oil for the sauce. Really?!? I'm betting it was supposed to be 1 cup broth from boiling the tongue. The written directions reference broth. An editor could have been great help.

So use this book, but carefully.
