Purchased this pizza stone along with the Breville Smart Oven. It heats up much faster than the Emile Pizza Stone (outstanding product for large stove).
Found the easiest way to use this stone is work with a cake lifter with parchment paper. Parchment paper: http://www.amazon.com/gp/product/B0000VLJ8G You can also get quarter sheets as well. Bread, Cake, and Pizza lifter: http://www.amazon.com/gp/product/B000237LPC Heat up the pizza stone for 15 minutes. Place parchment paper on cake lifter and build pizza or place bread on paper. Open door and slide the bread or pizza onto the stone. 3/4 of the way through baking, remove the paper. This will allow the crust to crisp up and brown. Over time the stone will stain, this is unavoidable, does not effect the baking. I leave it on top of the Breville Smart Oven, on top of the Breville Cutting Board. Using this stone without parchment paper or corn meal is difficult. The pizza stone is a worthwhile addition to the Smart Oven.

The pizza stone is vey useful for baking bread and quick breads. In the summer we use this rather than our oven because the Breville gives off much less heat into the kitchen. The stone is easy to clean, and so far shows no signs of chipping or other failures.
Not so useful for fresh pizza - why 1) You have to preheat the stone 2) We make our pizza with fresh dough, and this is hard to place on the hot stone. Instead we use the Breville 13-Inch Pizza Pan, which works well. Tip: We use the Wilton Cake and Cookie Lifter to get the bread out when done. A good size to reach into the Breville oven without burning your hand. Note: We don't use frozen pizza, and this stone might work well for that, since putting a frozen pizza on it would be easy.

We recently purchased a Breville 6 slice toaster/convection oven, which is wonderful all by itself. The 13 inch pizza stone we purchased not only makes a great pizza, but looks great as well. We tried so many different kinds of pizza. Overall this is a very good product.

Best thing about this is it fits in the brevelle Perfectly and Cooks Amazing the Pizza will come out throughly cooked throughout. no more doughy spots here and there, i wish it came with it though and wasnt extra. so minus a star for charging an extra $30 for it. the Pizza Crisper pan that comes with the unit is all Great. So you can save your money and just use the Pan that comes with it, unless you have to have the stone like i did.

I like this device. I haven't tried baking bread in it yet, but if it succeeds at that I might up my score to 5 stars. But, after reading an earlier review warning that the temperature settings are unreliable, I bought an oven thermometer and tested it myself. Sure enough, if I set the bake temperature to 300, or 350, or 450, it "pings" and starts counting down, as though it had actually reached the target temperature, when my oven thermometer registers about 200. It takes another 10 minutes to reach 350, and another 20 minutes to reach 450. So now I preheat the oven until my oven thermometer reaches the temperature I want, and then I put in the food to bake.
What I like: the easy to clean crumb tray. Being able to alter temperature and time settings even after the device has started heating. The pop-out middle tray setting. The fact that the machine shuts off when the time I've set has counted down. My Cuisinart would "ping" when the timer reached zero but it wouldn't shut off. The larger interior volume. |
