Product Description

Our Extra Special Bitter recipe creates a medium strength English ale that has great drinkability and slightly more evident emphasis on the bitter characteristic. To complement these select hop additions we've included authentic English malt extracts. Getting better flavor would require a trip across the pond.

I purchased this kit for my first batch of homebrew primarily because I can't find a good English bitter or ESB, at least in my part of the USA.

I did a full-volume boil on an outdoor burner, saving half the liquid malt for late addition with 15 minutes left in the boil to avoid scorching. The kit barely reached 1.049 OG - the bottom of the 1.049-1.053 range listed on the label, even though i rinsed the specialty grains well with hot water after steeping. Getting toward the top of that range would have required additional fermentable sugars or brewing less than 5 gallons total volume.

The included Danstar Nottingham Ale yeast kicked off active fermentation quickly, and fermented out in less than a week at a fairly low room temperature of 62-64F. I left it on the yeast cake in the primary for two full weeks, and gave it a week in the secondary for clarifying.

I bottled it using the including priming sugar. When I tried the first bottle at two weeks it was clearly under-carbonated. At three weeks, the carbonation level was good and the beer pretty drinkable. It pours a nice deep copper to light amber with a creamy 1 to 1 1/2 finger tan head and moderate lacing. The brew has substantial body and mouthfeel, though it had a slight astringent edge and alcohol bite initially. With the late malt addition, the full ounce of included hops gives it a bit more bitterness than intended, but it's not over the top. There's definitely plenty of malt and yeast character present. My wife is not a fan of highly hopped beers, but she likes this one a lot.

Since I have no cellar, I'm bottle aging at room temperature (under 70F), only moving a few at a time to the refrigerator. It is mellowing out nicely in the bottle. I recommend at least four weeks of bottle conditioning.
