Spray your clean, dry and cool shortbread pan very lightly with a non-stick vegetable oil spray.

I've had the absolute pleasure of baking with my Brown Bag Thistle Shortbread Pan since it came out in 1990! That's a serious 22 solid years of baking shortbread in this pan and it looks as good, well....actually BETTER than it did when I first got it! It now has a very nice patina of use from the 100's of pounds of butter that have baked merrily away in the shortbread dough.

Originally, I used spray PAM to grease it each time, but for the past 10 years, I use Wilton Liquid Cake Release that I apply with a pastry brush and that's much nicer, because you don't get that nasty sprayed oil all over the place. The shortbreads I've baked in here turn out 100% flawless every.single.time.!!!! It's a no-brainer! I've taught both my daughter and son how to use this pan and now the grandbaby's are giving it a go; what's more simple and satisfying than shortbread? And since my husband's side of the family are Scottish, this particular pan is used for all holiday events. I own 6 more of Brown Bag shortbread molds: 2 Christmas, 2 different hearts and a Wild Flower one, but this is my sentimental favourite.

Now, mine did NOT come in a box with recipes; it simply came "as is" with a ribbon holding a wee 2" x 2" booklet with a single basic shortbread recipe. THAT is the recipe I use 90% of the time and it has been passed along to literally 100's of family members and friends of friends. I'll write it out, below. But, along with the pan (back in 1990) Marshall Field's was selling a shortbread recipe booklet that I bought and HIGHLY RECOMMEND if you can find it! It's called The Gourmet Shortbread Book, put out by Brownbag and written by Lucy Ross Natkiel. It has 20 recipes; 1 is for molded chocolate. Recipes include 3 different types of "basic" shortbread; chocolate!!!!

I've made various shortbread recipes and cooked to different standards (hint of color, lightly browned, super pale, you know who you are). This pan made a difference to all recipes. It is heavy but not fragile and you do thump it down to smack the shortbread out of the pan. I've used spray to grease it or butter. I've not used it without. Got to be thistles doesn't it? Wedges are also traditional. It is a delight to display but it is in its glory when baking with it.

You must grease it well before pressing down cookie dough; if not the cookie dough will stick. Also do not use the cookie recipe on the box. Cookies bake best at 350 for 40 minutes.

Size Name: Scottish Thistle
Serving a round of shortbread is a Scottish New Year's Eve tradition. What better shortbread to serve up in the traditional way than one you've made yourself with Scottish thistles embossed on each wedge?
I've made shortbread from many recipes using many different methods, but nothing tops what is produced by baking it in a Brown Bag shortbread pan. I've been doing that for nearly 30 years now and have collected many pans in different designs. I have also tried different brands of the stoneware pans, but the others produced inferior results. I gave them away and stick to Brown Bag pans exclusively now. Well worth the price if you love great shortbread, they are sturdy and stand up to constant use--and they are dishwasher safe. What more could you want?
