Many things that we take for granted are simply not the right way to do things. When hypodermic needles first came out, advertisements bragged how they were carefully ground to be `absolutely flat!' Ouch, it hurts even thinking about that. But someone did and today these needles are highly angled so they go in with less pain. Obviously the right thing to do in hindsight.

Until this little idea, kitchen knifes were straight. This knife features a ten-degree angle that keeps your hand clear of the cutting board and makes the knife easier to use. Once you get one of these in your hands you will wonder why no one did it before. It is easier to cut food with.

As for the knife itself, the cutting edge is made of VG-10 stainless steel with outer layers of protective stainless steel folded around it to give the patter of a Damascus blade. The result is a beautiful, incredibly sharp knife that holds its edge over a long period of usage.

This has become the most used knife in the kitchen. I use it to chop vegetables, slice hard cheeses, thinly cut limes and lemons. Unlike other, duller knife brands, this straightedge knife has no problem cutting bread or tomatoes. My block contains some of my old Chicago cutlery knifes together with Grand Prix knifes by Wustof, but none of these compare in sharpness or ease of use with Shun, especially with Alton's Angle.

I used to think it wasn't necessary to spend money on an expensive knife because I'm not a chef; now I know that doesn't matter. I had this knife on my wishlist and received it for Christmas. Is it saying to much to say it makes prep work enjoyable. I have a Chicago Cutlery set but this is the only knife I use. The angle of the knife makes cutting and slicing easy and enjoyable. I've bought this same knife as a wedding present and recommend it to all my friends. Though it may not be a low cost purchase, the functionality and enjoyment I receive when using it makes it well worth the cost. I'm now a believer in having a quality knife in the kitchen! Thanks AB for putting your signature touch to a wonderful Shun product. I hope to add to my knife collection soon!

By default, my long fingers make it hard for me to wield a knife properly and safely. However, the angle on this knife turns the blade up just enough to make my daily cutting duties easier--and safer. We use this knife to cut everything from garlic and onions, to raw chicken and seafood. We are always pleased with the sharpness of the blade and the quality of the cuts. I would recommend Shun and Alton's Angle knives to anyone I know. Best knife I own.
