Book Description

September 12, 2000
Over the past two decades Bruce's Restaurant and Bakery in Great Neck, Long Island, has been widely recognized as one of the premier bakeries in New York. Each year more than 100,000 people flock to Bruce's to sample the freshly baked breads, danishes, muffins, cakes, and rolls that are served complimentary to each table, and no one leaves without stopping by the bakery counter to choose a special treat to bring home, whether it's the delectable chocolate babka or a pound of melt-in-your-mouth butter cookies.

Now, for the first time, more than sixty-five of the most popular recipes from this New York landmark are gathered in Bruce's Bakery Cookbook, revealing the baking secrets Bruce has kept under wraps for twenty years.

In Bruce's Bakery Cookbook, old-time favorites such as Lace Cookies, Danish Tea Cake, and Cream Puffs are offered alongside more recent classics, like Rugelach, Marble Chiffon Cake, and Scones. Each recipe features helpful tips, serving suggestions, and a nod to the dish's history at Bruce's. Chapters include Layer Cakes, Pies and Tarts, Breads, and Cookies and Bars, with chapters at the end offering important basic recipes -- buttercream frosting, pastry dough, white and chocolate layer cakes, chocolate ganache, and more. From New York Cheesecake to Peanut Butter Brownie Delight, the sumptuous treats in Bruce's Bakery Cookbook are sure to win raves from dessert lovers everywhere.

Editorial Reviews

From Booklist

In similar vein, Bruce's Bakery Cookbook offers recipes from Bruce Zipes' eponymous Long Island bakery. Zipes makes his own riffs on standard dessert items. For example, he ensures an ultratender crumb in his pound cake by insisting on confectioners' sugar in the batter. His Linzer torte improves the Viennese original with a layer of fresh red raspberries. Irish Soda Bread, normally innocuous, secures significant texture from whole-wheat flour and a sprinkling of currants, not to mention a flavor boost from caraway seeds. Lemon Meringue Pie, an American favorite, has a layer of sponge cake between the rich filling and the airy meringue to keep the meringue from disintegrating as rapidly as it might otherwise. 5.0 out of 5 stars Excellent baking book!, August 20, 2002
By A Customer
This review is from: Bruce's Bakery Cookbook (Hardcover)
Only one review of this book? I can't believe it! I stumbled across this wonderful book in the library. I like to try at least three recipes from a cookbook before reviewing it, and I did in this case. I made the flourless chocolate torte, the Philly fluff cake, and the chocolate chocolate cheesecake. All three were very simple to make (I am no expert baker!) and beyond delicious. My family devoured them all. How rare it is to find a cookbook you can totally rely on to provide consistently great results. This is that book! Wish I had a Bruce's near me!

5.0 out of 5 stars Sinful Simplicity, January 12, 2001
This review is from: Bruce's Bakery Cookbook (Hardcover)
Bruce's Bakery Cookbook made me wish I'd visited the famous New York Eatery so I could try all the wonderful treats out. Bruce takes some of his famous tastes and reveals the recipes, which are overall not too complicated at all. Including cakes, cookies, bars, brownies, pies, frostings, a wonderfully simple Chocolate Ganache recipe, and more. The Only thing that's missing is pictures of the recipes, or better yet, samples of each of them in little ziplocks.
