Bucheron is a French Goat's milk cheese from the Poitou-Charentes region. When biting into a wedge of Bucheron, the change in texture and flavor from the rind to the center will take your taste buds on a cheesy adventure. The wheels are crumbly center, almost taking on the consistency of soft clay, melts on your tongue and gives off a fresher, almost lemony flavor. It is an exceptionally interesting cheese that is best enjoyed in its natural state, with crusty break, cra ckers and grapes.
