I've enjoyed this delicious meat on many visits to switzerland. It's worth the hefty price, because it takes a lot of patience to make it. a marvelous companion to raclette..................add a few little cornichons on the other side. I see there's a California version for sale. haven't yet tried that. I'm afraid that it's not legal to import it from Switz. who knows? p.s. one must have the ability (probably machine) to slice it really really thin!)
