This candy thermometer is perfect for its intended purpose. I have read the many complaints about the clip, but don't quite understand why that is enough of an issue to downgrade this fine thermometer. I have always made a lot of candy and prepared various sugar solutions for French pastry and candy cooking. I never, ever used the clip on any of those thermometers. If you leave the thermometer clipped to the edge of the pan, you will never get a really accurate reading for delicate sugar preparations. The temperature on the side of the pan is usually cooler than in the center and the clip prevents you from throughly stirring and scraping the bottom and side of the pan. Just stir the pan really well, submerge the tip of the thermometer in the mixture, making very sure to NOT touch the bottom of the pan(this will cause a false reading, as the bottom of the pan next to the burner will be much hotter than the mixture as a whole), and Voila!, you will have a very precise temp. reading, every time. The thermometer is easy to use and is long enough that your fingers will not be burned by the hot steam while you are submerging the therm. in the hot mixture for a reading.

I highly recommend this thermometer to anyone, it measures very accurately and allows for perfect candy and sugar solutions during each use. The only thing that would cause this Therm. to malfunction would be human error (see above review). And no, I do not work for or have any connections to the manufacturer. I just really like this piece of equipment.

I own and operate yummyfudge.com We make batch after batch of fudge. This thermometer allows me to prep the next batch as other batches are cooking. I generally have three on the stove and am preparing another three while these heat. The thermometer sounds a warning alarm when the fudge reaches 3 degrees before target and changes the sound of the alarm when you reach your target temperature. It seems to be wonderfully accurate and has made fudge making much less stressful. My only negative comment (and the reason for only four stars) is that the the display is not very bright and I have to get eyelevel (stoop down) to read it, but since the alarm changes its signal at the target temperature it is not much of a problem. The clip keeps the thermometer in place much better than my other thermometers, I have bought all types of candy thermometers and I like this one best. I am extremely pleased with this purchase.

Now that some time has past I want to update... it didn't last long before the battery was dead, replaced the battery and it worked only one day....
inaccurate after that. now it is dead:-(

I researched many thermometers before I got this one. I love that it has the ability to set the temperatures to the different candy stages and that the display actually has the words 'hard crack' or 'soft ball' instead of just showing a temperature range. I especially love that it alerts you 3 degrees before the destination degree so you can take off the heat a little before it coasts to its final thermal destination; this is particularly useful since some of the candy stages only differ by 5 degrees. I also like that in addition to the preset temperatures for candy, I can set my own customized preset temperature and it will alarm me accordingly. I didn't have any problems with the clip, but I used a straight sided pan with no lip so that's why. I like that the clip has the feature that when you insert the thermometer stem you can rock it back or forth into three notched positions so the probe can enter the pot at an angle instead of being exactly perpendicular to the pot. I can easily use this as a fry thermometer using the customizable temperature function and if I poke it into a piece of meat, I'm sure it'll do fine as well. I just made a big batch of caramels and chocolate fudge and they were both a success, considering this was my first candy making attempt. I actually bought this together with Chocolates and Confections at Home with The Culinary Institute of America and will be donating quite a few confections to family and friends over this weekend ;) Seriously buy this thermometer, if you're already skilled with candies it'll make your life easier, and if you haven't tried candy making as yet, the task will seem much less daunting with this thermometer.

Since I received this thermometer, I have had problems with candy making. Although I cooked sugar to the correct temperature everything seemed over cooked. I checked this thermometer vs. another thermometer that I have and determined that this one is very slow to react to temperature changes. If you test it with bringing water to a boil, it will eventually reach 212F, but later than my other thermometer did in the same pot, i.e., when my other thermometer reached 212F (and the water was at a full boil), this one only read 204F. It just responds very slowly and hence is not accurate at all when dealing with something that is steadily increasing in temperature.

This is working very well for me. My pot has a slight lip on it but the thermometer tip stays far enough in the syrup I am boiling to give me good temperature control. I have not experienced it flipping out of the pot or losing its display. I own a wholesale bakery and we use it about 3 times per week.
