Popular in Southern cooking for decades, deep-fried whole turkey is gaining a national audience. When cooked properly it’s delicious, juicy, and has no greasy taste. Each fry kettle has its own instructions, but generally for best results the oil should first be heated to between 375 and 400 degrees Fahrenheit, and after the bird is added, maintained at 350 degrees Fahrenheit. With its adjustable stainless-steel clip, this 12-inch-long thermometer is ideal for attaching to any size vat or kettle to monitor oil temperature. Large and easy-to-read, the 2-inch dial registers temperatures ranging from 100 to 500 degrees Fahrenheit, and can be left in after cooking is complete to ensure the oil has completely cooled. A 14-pound bird usually cooks in approximately 45 minutes. The protective sheath for the thermometer features a pocket clip and loop to conveniently hold the probe. Since a large amount of hot oil is required, turkeys and other poultry should always be deep-fried outdoors. A five-year warranty covers the thermometer against defects.--Ann Bieri

Bottom line is that I bought the wrong thermometer.
This thermometer was made for use in deep frying turkeys as its label clearly states. It needs to be in over 4 inches of oil to register the higher temperatures (above 290 deg. F in my case). In its first use I wanted to raise the temperature of just under 4" of oil to 350 Deg F. The readout climbed steadily to 290 Deg F and stopped. My initial response was, needs more heat so cranked up the burner. Readout stayed at 290. Got suspicious and tried a known accurate thermometer - oil was at 440 Deg F and climbing rapidly. I don't fault the manufacturer. I was using its product in a manner it wasn't specifically designed for.
So, why am I telling you I bought the wrong thermometer? Because I want to warn potential users to be aware that there may be a problem getting readouts of higher temps. You could end up with dangerously overheated oil.
From other reviews I have seen this limitation is not present on all thermometers of this model.
The pros for this device: easy to calibrate, accurate readings after calibration, clips securely to pot, easy to adjust depth of probe, easy to read
Cons: Doesn't always stay calibrated, Water BP readings can vary by 20 to almost 50 Deg F. This is the reason for just 4 stars.

I'll keep this short. If you are frying in 3+ inches of oil, this is probably a great thermometer. Anything less than 2.5 inches and you will be disappointed.

The reasons:
The temperature sensor is located 2.5 inches from the very bottom tip of the thermometer. So, if you don't cover the sensor with with a little liquid more to spare, you won't get an accurate reading. This means that you'll want a different thermometer for shallow frying or candymaking.

The readout is consistent and the holder works fine to keep it at the right height and the correct distance from the sides of the pot. It calibrates easily and accurately. Perfect for turkey fryers.

It gets 3 out of 5 stars from me because I expected the sensor to be a little closer to the very tip of the thermometer. With the adjustable height of the holder there doesn't seem to be a very good reason for such a distance.

Great accurate thermometer. Temps will probably read inaccurate out of the package but it has an adjustment nut and instructions on how to adjust on the package. Don't listen to the reviewers who couldn't be bothered to read the instructions.

I needed a high temperature thermometer and chose the CDN IRL500 deep fry turkey thermometer for my cooking. Used it once to measure oil temperature (350 degrees) and will use it for all my high temperature cooking needs, seems good so far!!

The clip for this thermometer holds it vertically down the side of the pot and not sticking out at an angle like most others do. I have had a time with others trying to prevent them from touching the basket or bird.

I ordered this for my Turkey Deep Fryer just before Thanksgiving and I'm really glad I did. The thermometer that came with my deep fryer totally crapped out. This one works as advertised and I really liked how it attaches to the side and manages to stay out of the way. I did test it with boiling water and made a very slight calibration adjustment, it was covered in the directions and simple to do. My turkeys (both of them) came out perfect! What more can you ask.

I don't know about using this thermometer for deep frying a turkey, but it works great to take the temperature of the water in my electric kettle to make sure it is the perfect temperature for varioius teas! My electric kettle is much too deep to use a regular thermometer and this works perfectly. Why buy an overpriced electric kettle with a temperature gauge when you can buy a long thermometer and just check the temp yourself?
