I had the rectangular version of this and liked it - now I have the smaller, ROUND version and LOVE this one. I gave the other one away and never looked back. Very comfortable to use; sharp as all get-out; has a Safety setting; and cleans fairly easily with hot water and a brush. Now I buy the cheaper meat from Winco and tenderize it myself. Great way to make Chicken/Country Fried Steaks. This is so good a Kitchen Toy I give it as gifts to my grown kids

If you're used to using a Jaccard tenderizer, please try this one! I use this in a busy restaurant and so far it's gone the distance. I've been through 3 Jaccards in four years. Pretty flimsy these days, sad to say. Chefs 56 is very sturdy, well weighted and feels good in your hand. It has no removable parts but still cleans up nicely in the dishwasher. I find that the circular shape seems to more evenly distribute the weight of the blow. This means that you can tenderize without flattening, unless you want to. A bit more umph on you downswing can pound out perfect paillards with out tearing the meat. Also, cuts marination times in half. Will never buy Jaccard again. Oui Chef(s)!
