The iron wok is used on a gas burner. This particular burner isn't very high BTU's. Nevertheless, I am able to get tofu crisp using the iron wok. The flavor is unbeatable. Although the wok is very heavy, I am not moving it often enough for it to be a problem. One tip is to remove old oil as soon as it cools so that the wok does not have a black residue.
