Book Description

The Sampler Edition is a true cross section of what the full version will be. The Sampler contains eleven great Cajun recipes with accompanying photos and complete step by step instructions. It also contains history and facts about Louisiana and New Orleans. Additionally there are several inspiring stories with connections to a specific recipe. Lastly, there is some great Cajun humor scattered throughout the manuscript. The full version of Cajun Cuisine and More is all of the above, times four. The full version will contain 48 great recipes, with all of the related inspiring stories, Cajun humor and 60 plus photos, all for your culinary delight, your enlightenment and entertainment.
Author and Chef, Paul Raphael takes the reader on an adventure, flavoring the recipes with history, humor, regional interest, or related short stories that make the dishes unforgettable, and enhance the joy of their creation. He inscribes the recipes over the still legible manuscripts of history. Imagine entertaining your guests with the evolution of your table’s bounty – that’s when a cook becomes a story teller!
Each cookbook is unique, this one taking the reader from Louisiana’s early colonization to present day Acadiana, and through much of what evolved in between. Interspersed with New Orleans French Quarter specialties like Beignets with Café au lait, and Cajun country cooking such as blackened catfish and sweet potato casserole, there is an ample list of recipes from which to assemble a multi-course meal, or just enjoy a traditional snack or dessert with a friend.

Wow. I have been around the south Louisiana cooking scene for 35 years now and this is by far the best book I have found on the market. The recipies are a unique take on a classic cultures cuisine. The humor alone was enough to keep me enthralled. 6 stars

Great ebook, if you like to have fun in the kitchen...but even better if you are a reader. The stories have much to say to the heart. I highly recommend this to both the cook, the armchair reader, and those who like to file away historical trivia.

5.0 out of 5 stars Ce Bon April 20, 2012
Format:Kindle Edition
Having grown up in Louisiana, I've seen most, if not all, cookbooks on our famous cuisine. But THIS book with it's collection of sweet, salty and seasoned dishes most definitely makes a native suddenly find a whole new appreciation of the dishes for which we are so well-known. I heartily recommend this cookbook not only for the recipes but also the humorous and sometimes heart-tugging stories that accompany them. A must for your personal collection and an excellent gift for anyone.

5.0 out of 5 stars A cookbook with stories? Wonderfully unique! April 17, 2012
Format:Kindle Edition|Verified Purchase
In reading through this cookbook, I not only found mouthwatering recipes (a few I have tried already with great success)such as the most delicious Dirty Rice I have ever had...and the Concord Cake...Lordy, but dat was GOOD! I was most fascinated with the stories. Some were humorous and some tugged at my heart, but each story was uniquely tied to a recipe. This is a book that will make a great gift and I can't wait to share it!

I don`t know anything about Cajun cooking or the Cajun life but these stories and recipes were a great intro. The shrimp Creole is excellent. My next recipe to try is the sweet potato pie! Yum!
