Another Low-Carb book, just Cajun,

As a lover of Cajun cuisine, Jude Theriot created a low-carb cookbook to show low-carb dieters that you can even enjoy Cajun cuisine!
Jude Thierot is a chef. He used to be the executive chair of the International Association of Culinary Professionals Foundation from 1997 to 1998. He has written five additional books on Cajun cuisine: Cajun Healthy, Cajun Quick, La Cuisine Cajun, La Meilleure de la Louisiane: The Best of Louisiana (sp), and New American Light Cuisine. Through his love of Cajun cuisine, and adapting some American favorites, Theroit wanted low-carb dieters to learn and enjoy the food he loves best, Cajun! Each recipe in this book lists serving size, total carbohydrates per serving, net carbohydrates per serving, and calorie count. While creating this cookbook, Theroit lost more than 100 pounds. The recipes are easy-to-read and utilize simple ingredients including Cool Whip, Tabasco Sauce, Equal and Splenda. I could not find any unusual ingredients, except soy flour, which is available in most grocery stores. You may just need to look in the natural food section. There are no photographs or illustrations. Some nice recipes that we enjoyed were: Just Tomato Salad, Grilled Flank Steak and the Chocolate Mousse. This book was nice, but a few photographs would have helped sell some of the recipes in this book. Also, knowing yet another person has jumped on the "low-carb" bandwagon was a bit frustrating, despite understanding that Theroit just wants to share his love for Cajun food.

Chef Theriot has managed to help a successful gastric bypass patient and Southern Louisiana Cajun to continue to have the tastes I grew up with. The dishes have authentic flavor without the simple carbs. I gave a copy to my surgeon who has family from my home town and he loves it too!

Typical for Amazon, the book arrived within a couple of days. The recipes look awesome. Surprisingly the book was autographed by the author and appears to be a first edition. At first I thought it was just a printed autograph, but running my finger over the writing and looking at the other side of the page, it was actually written with a ball point pen.
Pros: Very easy to follow instructions using common ingredients. Each recipe lists carbs, net carbs and calories per serving as well as giving the serving size. One of the other low carb books I purchased at the same time doesn't actually list the serving size. You have to figure it from the number of servings it makes vs the quantity it makes. Cons: Only one so far. I need to watch my fats and cholesterol as well as carbs and the recipes don't mention them. To be fair, this is a low carb cookbook, not a lot fat cookbook but the information would be helpful. Summary: If you like food that bites back a little, if you can cook, if you like Cajun cooking and you want to watch or cut your carb intake, this book is for you.

First of all I must admit that I am very impressed with Chef Theriots accomplishments. Not many can do two occupants and go to the top with each. I gave my evaluations based on the three salads I made from the book. I made two tomato salad recipes which were fabulous and will be added to my dining routine. His kidney bean salad was very good but seemed to have to many ingredients. That was only my personal opinion because my son horded it for his lunch. After tasting his salads I immediately wished that Jude would come up with a salad only cookbook.
This cookbook keeps surfacing to the top of my cookbooks. Im quite optimistic about about the rest of the cookbook. I love to eat healthy when the food is good. |
