This product is great as usual. Most people know callebaut chocolate so I wont elaborate on that. HOWEVER what i will elaborate on is the seller.

I have never ordered meltable or perishable items online that have ever came to me in any kind of usable condition. BUT, culinary direct packaged this stuff so well that even after 5 days on a ground shipment from California to North Carolina, by the time I finally got through the packaging, the tape, the bubble pack, the ice pack, the chocolate inside was unmarred and not a single disc had even smudged the outside of the packaging. I can NOT believe the amount of care that went into this package and the fact that even with such a small amount they took the time to provide the best product experience.

This is to comment on some very misleading info in other reviews for this product, and to point you to a more professional and reliable bulk chocolate vendor.

1) Callebaut products are manufactured in Belgium. The company has distributors in the US, but no manufacturing facilities. Cacao Barry and Callebaut merged and are now the same company, Barry Callebaut. Cacao Barry products are manufactured in France.

2) On supposedly "different" US vs. European versions of Callebaut: To set the record straight from what another reviewer wrote regarding a "natural flavor" that is present in only the US Callebaut, and not in the European, thus causing a bad taste and an allergy. It's actually just natural vanilla flavor (detail on FDA labeling legalities below). Further, this reviewer claims that the Callebaut chocolate that they ate while in Europe tasted better and was much higher quality than the Calllebaut chocolate they have eaten in the States. Hmmm...let's see, my eating Callebaut chocolate while on vacation at an outdoor café in Paris, Vienna or Rome during the spring probably WOULD taste a LOT better than when I'm eating it in my kitchen in the middle of a Northeast winter. Then again, so would supermarket chocolates and just about everything else.

3) On melted chocolate and shipping: When you order chocolate from an internet-based vendor, you never know what you're going to get. When you order expensive high-quality chocolate, not picking the right vendor could mean wasting lots of money. It's all about the storage, handling, shipping time and inventory turnover (freshness). There are lots of unprofessional vendors of bulk chocolates out there, and I've tried some of them too.

Let me begin by saying that at my local Whole Foods, a mere pound of this chocolate sells for $18.99. Naturally it was a no brainer to buy them here instead. I've been using Callebaut for two years now and never looked back; the Ghirardelli stuff from the grocery store tastes like wax in comparison. This was my first time buying it online, and as another reviewer noted, the packaging is the best I've seen. I bought four pounds and it arrived in a small box. Each 2lb package was padded with those little air pillows, wrapped in 1/4" thick insulation, came with its own ice pack and bagged in heavy duty plastic. I opened one but I'm keeping the second package as is, all wrapped up, in my freezer until I need it because it'll last for years like this. SOLD.

Callebaut chocolate is one of the premier chocolates for baking due to its cocoa butter content but the Callebaut blocks of chocolate are much too large for the small scale cook. This product is only 2 lbs and since the chocolate is in chip form, it does not need to be chopped. The chocolate was extremely well packaged in insulator bags with cold packs provided to prevent and melting.

I hate to be a pessimist here and I usually don't question the information that Amazon sellers put forth: I take them at their word that they are going to send me what they say they are. In this case however, I'm not at all convinced that I actually received "Callebaut" chocolate from this seller, World Wide Chocolate.

The description of this Callebaut chocolate (53.8%) sold by WWC clearly says it is in the form of "small discs" and if you look at the picture, it shows what appear to be small discs. I did not receive small discs. Mine looked exactly like your garden variety chocolate chip (it could have been Nestles's for all I know) and it didn't taste like I'd expect a "fine" chocolate to taste. 

Contrast this to an order for exactly the same thing (Callebaut 53.8% small discs) from Olive Nation. These chocolates indeed looked like small discs and  tasted heavenly.

Since I'm just a home baker I can't say for sure which product is the real thing. I can tell you that they were definitely NOT same product and the one from Olive Nation looked like the picture and tasted much better. You be the judge but I will never, never order from World Wide Chocolate again.

Superior flavor and texture to any supermarket chocolate chips for baking cookies or for recipes that call for semisweet chocolate that will be melted and mixed into a batter for example. While I can get various brands of bulk/block gourmet chocolate in local stores (including Callebaut, Valrhona etc.), the shards and flakes get ALL OVER the place if I have to chop it up for a recipe, not to mention my hand gets sore from pressing the knife through hard chocolate so many times. These "callets" (chips) are the same taste and quality as the block without any of the mess and effort. I've done side by side taste comparisons to all available supermarket semisweet chocolate chips (Hershey's, Nestle's, Ghiradelli, and a few random 'natural' or gourmet brands I came across) and the Callebaut is far superior, it's not even a close contest. I find myself constantly reaching in and grabbing a handful to eat if the bag is open, I love the taste and texture.
