Warps, thin materail -- Not what you expect of "Calphalon",

This review is from: Calphalon Classic Hard Anodized 16-Inch Roaster with Nonstick Rack (Kitchen)
I've been using Calphalon cookware for 15 years and have been very pleased with it overall. Based on that history, I decided to order this roaster because, while it's not a tri-ply, it's Calphalon, right? I was expecting a solid, anodized raosting pan similar to the other Calphalon cookware I've used.
Big mistake. The pan was light weight and thin enough that, on unpacking, I seriously considered sending it back. However, still willing to give Calphalon the benefit of the doubt (and with Thanksgiving looming), I decided to go forward. Another reviewer mentioned the pan warps at temps above 450 degrees. I didn't even hit that temperature, and the pan *still* warped. Drippings burn at the drop of a hat on the bottom of the pan (be it turkey, roast, or what have you. even if you add more liquid). Don't even think about putting it on a burner to make gravy after you have the main protein out. I have resigned myself to having to up the budget to get a decent roasting pan. If you are really wanting to get a roaster for under $60, try another product (or even one of the disposable aluminium ones you can get at the grocery store for about $5 -- really, this one is that bad).

Cheap Pan at a premium price,
This review is from: Calphalon Classic Hard Anodized 16-Inch Roaster with Nonstick Rack (Kitchen)
This pan warps at temperatures above 450 degrees and the anondized finish has begun to peel off after less than ten uses.
If this roaster was priced at $25 it would be a good buy. It is way overpriced at $59.95. Spend an extra $50 and get the Calphalon stainless steel Tri-ply-roaster----it is the real deal. Dale Garner Atlanta, Ga

I love this roaster. I have not encountered any warping problems and I have used this pan extensively for two years. It deglazes well for making gravy and sauces.

Pan well worth the money. Bought it because i really like the hard anodized and really dislike non-stick interiors. Well, this has no non-stick, so exactly what looking for. Did a 19# turkey for Thanksgiving. Even tho not a non-stick, the interior cleaned up with no effort. And we had some burned on vegatables on the bottom as our broth boiled off. Even so, soaked it a few hours, and went to clean. Just used a Dobbie pad and Dawn, cleaned up real quick. Was impressed. Also rosted 6# of brisket in it the other week. Again, cleaned up real nice and brisket cooked in a shorter time. So even tho $60, well worth the extra money from the cheap pans out there. Definitely get what you pay for. Problem with the cheap non-sticks is eventually the non-stick comes off. So in long run a waste of money. I know, this pan replaced one of those cheaper non-sticks. Should have bought this the first time around.

This is an excellent roasting pan of high quality. It will hold a large turkey. If you like to deglaze for gravies, etc, this is the pan. The rack is non-stick and cleans up easily. If you don't do gravies, go for the non-stick version for easy clean-up.

Not going to waste too much time on this review. I've had two of these; both roasting pans have been recycled.
Its a great roaster for a large turkey or a large/mid size roast with lots of roots & veggies to completely cover the bottom. However, the metal is extremely thin and will warp at higher roasting temps or if the roaster is lightly loaded, so use caution or you won't be pleased with the pan's transformation. Again, its great for turkey day and I'll probably buy a third if a sale price makes it hard to pass up. This one would be reserved strickly for big birds and large roasts that won't fit into my higher quality, albeit smaller roasters. The non-stick rack is phenomenal; I have two :)

I love this pan. I've cooked one chicken and two turkeys in it in the little time I've had it. It's not non-stick but cleans up like it is. A little warm water and it's brand new again. Easy. The handles turn in so it's easy to store. I use the pan without the rack to defrost the turkeys (little hint there). Well worth the money!

Great Basic Roaster,

This is a basic roaster and is a great pan for roasting. I do not know where the product description came from but it is incorrect. If you look on the Calphalon web site you will find the correct product description. This roasting pan is not oven safe up to 700 degrees and it is not broiler proof. I do not know why anyone would want to broil in a roasting pan or cook a roast above above 350 degrees. Roasting at higher temperatures usually results in disaster. Most roasting is done below 400 degrees except for a few occasions when you might want to put a quick sear or browning on your roast. That said, if you use this pan as the manufacturer intended you will have great results. I have owned anodized aluminum cookware for many years. It is easy to clean and gives good results if used properly. One of the secrets to great cooking is understanding both the benefits and the limitations of your cooking tools. I like this pan because it transfers heat well, is light weight and easy to clean. There are better pans out there but this pan will give you a great roast and it is easy to make gravy on the stove top with it. Tip, use as low a heat as possible to breakup the fond and to make your roux.

This was a great roasting pan, with the non-stick rack being perfect for clean up. The only reasons I wouldn't give this 5 stars are:
- When I started roasting my Christmas turkey at high heat (500F), I had not added any liquid to the bottom of the pan to make sure I good initial browning, and the pan seemed a little burnt. It was ok once I added the liquid after reducing the heat. - Ideally, i'd have preferred a flat rack, not a v shaped one. And making gravy was so easy with this pan, the best I have used.

I've been using Calphalon cookware for a long time and I was happy with it. But this one is different. It is not nonstick at all. I used it for thanksgiving with the non stick rack only once. The rack was non stick of course, but I could not clean the pan after soaking it for 3 days in water. So it looks like an old and burnt pan after just one use. It is interesting that the highest temp I used was 400. Overall it is "NOT RECOMMENDED AT ALL".
