Amazing cupcake pan!,

I run a small baking/cupcake business and have tried many different cupcake (muffin) pans over the years. I didn't really think that there was much of a difference between pans, until I tried this one. My cupcakes come out with a perfect dome on top, the sides never stick, and they are always perfectly cooked from top to bottom. I definetly recommend spending the extra money and gettin a quality cupcake pan like this one! I do wash it in the dishwasher, and have not had any problems thus far.

I had been known among my friends as the muffin queen and would sometimes bake up four dozen in one batch. I had Baker's Secret pans (rusted if not thoroughly dried), Wilton pans (awkward handles), Wearever pans (don't like aluminum) and some generic unknown brand pans (a combination of the above problems). When I finally broke down and bought a Calphalon pan I said good-bye to all the rest. Then I just had to buy another Calphalon pan--I rarely make just one dozen muffins at a time. I would not go back to any of the others. The muffins brown evenly and are shaped perfectly.
I used to use muffin papers all of the time to aid in the removal of the muffins. They seemed to stick in the other pans no matter what I did. I had been told this was one of the hazards of high altitude baking, so I didn't think I could do anything to change it. Many of these pans had to be washed by hand and with the muffins sticking it was tedious to wash out the stuck parts from each muffin cavity. But I felt the muffin "presentation" was not as nice when they were in papers. Now I rarely use papers--just a quick spray in each cavity and the muffins drop right out after cooling in the pan just a few minutes before inverting. If I make blueberry or chocolate chip muffins I do run a small silicone spatula around each cup before inverting. That is because sometimes the berries or chocolate chips stick a little. These pans go right in the dishwasher without any visible ill effects. I love the ease of clean-up. I highly recommend these pans if you are frequently making muffins or cupcakes.

I have had this for several years now and my daughters love muffins, so it gets used often. I have always hand washed it. It has not rusted, unlike all the previous muffin pans that we have owned. It's a little bit heavy but I love it. Finally a baking pan that lasts!
