Amazing cupcake pan!,

This review is from: Calphalon Classic Bakeware 12-Cup Nonstick Muffin Pan (Kitchen)
I run a small baking/cupcake business and have tried many different cupcake (muffin) pans over the years. I didn't really think that there was much of a difference between pans, until I tried this one. My cupcakes come out with a perfect dome on top, the sides never stick, and they are always perfectly cooked from top to bottom. I definetly recommend spending the extra money and gettin a quality cupcake pan like this one! I do wash it in the dishwasher, and have not had any problems thus far.

I had been known among my friends as the muffin queen and would sometimes bake up four dozen in one batch. I had Baker's Secret pans (rusted if not thoroughly dried), Wilton pans (awkward handles), Wearever pans (don't like aluminum) and some generic unknown brand pans (a combination of the above problems). When I finally broke down and bought a Calphalon pan I said good-bye to all the rest. Then I just had to buy another Calphalon pan--I rarely make just one dozen muffins at a time. I would not go back to any of the others. The muffins brown evenly and are shaped perfectly.
I used to use muffin papers all of the time to aid in the removal of the muffins. They seemed to stick in the other pans no matter what I did. I had been told this was one of the hazards of high altitude baking, so I didn't think I could do anything to change it. Many of these pans had to be washed by hand and with the muffins sticking it was tedious to wash out the stuck parts from each muffin cavity. But I felt the muffin "presentation" was not as nice when they were in papers. Now I rarely use papers--just a quick spray in each cavity and the muffins drop right out after cooling in the pan just a few minutes before inverting. If I make blueberry or chocolate chip muffins I do run a small silicone spatula around each cup before inverting. That is because sometimes the berries or chocolate chips stick a little. These pans go right in the dishwasher without any visible ill effects. I love the ease of clean-up. I highly recommend these pans if you are frequently making muffins or cupcakes.

I have had this for several years now and my daughters love muffins, so it gets used often. I have always hand washed it. It has not rusted, unlike all the previous muffin pans that we have owned. It's a little bit heavy but I love it. Finally a baking pan that lasts!

I am SO HAPPY with this muffin pan, after baking with 3 other pans ( all different brands ) and frustrated with them all, I finally decided to spend a little extra to purchase this Muffin Pan, I only bought one pan to start off with though, so that if I wasn't happy with it, it wouldn't have been too much of a loss. I am so thrilled with the performance of the pan that I just purchased another one. I tried making the exact same muffin recipe in each of my pans to see if there really was a difference in the way it bakes, the way it pops out of the pan, the way it browns, texture, moistness, etc ...after baking the same muffins in all different pans, this one is the only pan I will use from now on. Hands Down they turned out exceptionally perfect when baked in this pan verses the other pans. They popped out with EASE. They browned perfectly, EVERYTHING about this pan I am absolutely happy with and I will be purchasing more for gifts as well for the other bakers in my family!

Love this pan. Sounds dumb but I've had the hardest time finding a pan that was the right shape. My daughter and I began making cupcakes for others and for sale and any pans I could find were too shallow and/or wide. These pans make the perfect traditional cupcake. My search is over.

I've been using my mom's AND grandma's muffin/cupcake tins for years...this is a GREAT replacement since it holds twice as much!!! I like the 12 cup quantity so much I bought two of these!!!
Great for cupcakes and muffins. The nonstick surface is VERY easy to clean. It's lightweight and easy to store. Definately a GREAT purchase! The Calphalon brand maintains it's reputation with this great product!

Calphalon baking products are more expensive than the competition by about $10, but they are totally worth it. The Calphalon baking products are thicker than other products, which ensure that the heat is directed evenly, resulting in no burned spots and simply a better outcome.I own both this regular sized (12 cups) Calphalon muffin pan, and Calphalon Classic Bakeware 6-Cup Nonstick Muffin Pan. Buy with confidence. Highly recommended.

I have used these pans on two occasions so far to make blueberry muffins. I should mention here that on each baking I always set my timer earlier than what is called for in the recipe to check for doneness. The first time I used paper cups and found that the muffins were overcooked and stuck to the paper so on the second occasion I did not use the paper cups and tried a different recipe. That was 24 muffins I couldn't give away.
The last occasion I baked a double set of 24. The first time around the recipe called for 425 degrees for 17-19 minutes. The muffins were smoking and burning early so I tried again. This time, I set the oven for 400 degrees (I had seen comments that lowering the tempurature works on non-stick pans) and started checking at 10 minutes until it tested clean and removed from the oven. When I came back later to remove from pan, I found that the muffins had been singed on the sides and bottom despite the top appearing perfect. That was 48 (72 if you add the 1st set) ruined muffins which I so carefully prepared, placed on lower-mid level rack, rotated mid way through baking and tested early. A whole day wasted! I see all other reviews on this product are great which is why I purchased it, but I have never had burnt muffins in my old aluminum pans. I am considering trying SS next. I love Calphalon cookware, but these dark pans are not quality products. If there was any special handling needed, it should have been stated. I don't normally write reviews, but in this case, felt the need to give a different perspective. I purchased these a while ago for special occasion baking; I am wondering if I can return or exchange them.
