Thin Sheets That Curl and Buckle in the Oven - YUK!,

I ordered 3 (2x) sets of these so that I would have a full complement of 6 cookie sheets.
When they arrived, I noted that they were a bit lighter than the commercial quality cookie sheets that I had used previously, but my thinking was that if they baked well, that was all that counted. I always bake with an Exopat silicone mat on my sheets. Upon the first use, when they were placed in the oven, the edges of the cookie sheets turned up about a quarter of an inch - an ominous sign that the sheets are too thin. The next thing I heard was the tap tap tap of sheets buckling in the oven. Lack of dimensional stability at 350 degrees F translates to poor heat conduction, and burned cookie bottoms. This symphony of metal buckling, courtesy of my new $15 cookie sheets. Even with the Exopat silicone sheets on them, the cookies were barely done when I decided to pull them from the oven to save the bottoms from getting burned - typical of cheap, thin cookie sheets that one knows one needs to "double pan" to prevent burning. What a wonderful situation Amazon has presented me with - $90 and a garbage can full of cookie sheets. Yes, into the garbage all six sheets went - no matter how costly, its even more so to live with poor quality baking implements and invent work-arounds to augment their performance. These are no better than inexpensive supermarket cookie sheets - actually they're worse - with the price-point of supermarket wares, one can infer the quality that one is getting. I used to believe brands like Calphalon stood for quality, and this translated into some assurance that products bearing premium names would be of, at least, mezzanine quality. When I buy on the web and cannot better scrutinize the items I'm choosing, I tend to favor trusted brands. As it turns out, these sheets did not have the Calphalon name on them anywhere - Calphalon apparently made the decision to buy up a bunch of cheap -Made in China- cookie sheets and sell them at a premium price by leveraging the Calphalon brand. With the holiday baking season upon us, what do I plan to replace them with? The Vollrath cookie sheets (not non-stick, but I use silicone mats, so do I care?) recommended in Cooks Illustrated magazine. They're in stock at Chef Resource - their price everywhere is $19 but most vendors are out of them. They're due to arrive via UPS day after tomorrow - Tuesday, 10/17. Holiday baking is much too sacred a tradition to be left in the hands of Calphalon, apparently. If I could give them no stars or provide an icon of 6 sheets going into the trash, I would so rate them.

I bought these as a replacement for a set , from another brand , that were awful , they did all the bad things that a prior reviewer spoke of buckling etc.
Prior to this , I had owned a professional collectors version of this set . After 5 years of heavy use and some abuse , it was time to replace them . I couldn't find the same set, they don't make them any more . I went with the lesser brand and was very disappointed. This set works great , I made a batch of cookies tonight , they cooked evenly , the sheet was stable and clean up was a snap. My only bug-a-boo with this set is is has Calphalon in big raised letters on the cooking side of the sheet , right smack in the middle ... I don't like the thought of one of my cookies being labeled lol so I used one of my silicone baking mats on top of it.

Heavy-duty cookie sheets,

I'm surprised to read the previous review, because I just had that experience with a different cookie sheet, one that got great reviews from most people. I've owned my Calphalon sheets for a few years now, and they are solid, heavy-duty sheets that have never warped in my oven (and I bake scones every week at 425o in a convection oven).
I like that the 17" length makes them big enough to hold a 15"-wide sheet of parchment paper without having to fold or trim it. The two unrimmed edges make it easy to prepare items on a sheet of parchment and then just slide the sheet underneath it. The one thing I don't like is that the nonstick coating is pretty slippery... if you turn your pans end-to-end midway through a bake, you have to be careful to keep the parchment and baked goods from slipping off the pan. I'm still confused as to why my experience is so different from Brian's... but the Calphalon sheets get two thumbs up from me.

I bought these to replace a bunch of Calphalon cookie sheets I already own. I assumed these were the same, but they were not. These are no better than the ones you can get at your local bigbox store, or for FAR less on Amazon. They are thin and very easy to bend. I didnt even use them because I could instantly tell they will buckle in heat. If you are looking for commercial grade sheets (or even thick sheets), these are 100% POSITIVELY not them. Any other reviews that say how great they are probably have not owned good sheets, or are simply impressed with the non-stick, something I can not comment on as I will return these.

It's about time I find a reasonable and quality sheet. I have used them with foil and with out with no problems. Have done bread to cookies and they all come out perfect across the whole sheet. It's not buckled on me and that is a first. Very happy customer!

I am a home baker with more than 30 years of baking experience. I always am searching for the perfect cookie sheets, and prefer thin, non-insulated sheets with no sides, just a slight bend at each end to grip the sheets. Even heat distribution is critical. I received these sheets as a gift, and after using them, immediately ordered another set. These are a mid-weight sheet (I noticed one reviewer called these "thin" and I disagree with that assessment) with enough heft that they do not flex or bend. They are thin enough to transfer heat to the cookies easily and yet thick enough to distribute the heat and bake the cookies evenly. The nonstick surface is very nice, although most cookies I bake do not require greased cookie sheets. I did bake some rolls on these sheets that normally stick a bit, and they did not stick at all to these sheets. The undersides are completely flat, which allows for easy sliding onto and off of the oven racks and onto cooling racks. The sheets are large enough to hold 9 larger or 12 smaller cookies. In addition, the price is very reasonable for the quality. If your preference is for uninsulated cookie sheets, I highly recommend these.

These cookie sheets are nothing like the Calphalon cookie sheets that I own. I bought these to give as a gift and returned them the day I got them. These are very thin and flimsy, not what I expected at all from such a quality brand as Calphalon. It is worth it to spend the few extra bucks on the nicer more durable cookie sheets!

i was in the market for new cookie sheets and decided to pick these calphalon ones...mostly because i know that calphalon is a brand i can trust. they're great and get the job done. if you're toasting bread though, these might not be the ones for you because they don't have a lip that goes all the around, so you could lose some of your bruschetta toasts to the bottom of your oven like i did. otherwise, i have no problems with them.

If you want to spend a few bucks more these cookie sheets are well worth it. Made very well and will last for a lifetime.
