This cake pan is certainly the best I've ever owned. I was so tired of making what had the potential to be a great cake, only to have half of it left in the pan, despite my best efforts. Since buying this (actually, I bought two), I've cleaned my cabinets of all my old bakeware, and replaced everything with Calphalon.

The advertising claims "heavy gauge aluminum construction". Not true. Calphalon Commercial Bakeware is aluminized steel. Mine are starting to RUST. They put a really really thin coat of aluminum over the steel to help it heat more evenly. But this is alot to pay for a conventional rust-prone steel pan. And their customer service sucks. They haven't answered my...

This cake pan is certainly the best I've ever owned. I was so tired of making what had the potential to be a great cake, only to have half of it left in the pan, despite my best efforts. Since buying this (actually, I bought two), I've cleaned my cabinets of all my old bakeware, and replaced everything with Calphalon.

I wouldn't say that they turn out perfect every time, but it's pretty darn close. You should definitely follow Calphalon's directions when they say prep the pan as you would any other, and follow the cake recipe as though this were not a non-stick pan. That is the only way you are going to have the easy slide-out. When I didn't do that, thinking to myself that the pans were that amazing, my cakes stuck somewhat - although nothing like what I'd experienced before.

Take note of the fact that you can't stack Calphalon - make sure you've got the room to store it, or are prepared to take the time to care for it properly.

Also, you cannot put it in the dishwasher. This is a very important point when it comes to Calphalon.

Again, make sure you read the use and care instructions.

You will never need to own other cake pans again.

They haven't answered my complaints about the rust problem (in one of my pans, it is on the non-stick inside surface where there is a seam, and affects flavor of baked goods).

Because I've loved using my Calphalon cookware so much, I decided to find out if their bakeware would give me improved baking results. I'm happy to say that I've been very pleased with these cake pans. I ordered three of them because one of my favorite things to bake is a three-layer German Chocolate Cake that I make from scratch. With multi-layered cakes, it's important that the layers come out as evenly as possible. Because these 9-inch cake pans are very heavy duty, the layers do bake evenly, and the cake has a good texture.

Before pouring in my cake dough, I grease the insides of these pans with a bit of shortening, wiping off the excess with a paper towel. Although the pans are nonstick, I find that this method works best for me. Sometimes I will also cut out rounds of waxed or parchment paper to line the pans. I use the shortest of the suggested cooking times for my recipes. If I need to loosen the edges of the baked cake layers when removing them from the pans, I use a Calphalon nylon spatula/knife. I also use this pan to bake Bisquick coffee cake, as well as refrigerator biscuits and cinnamon rolls, when I don't have time to make them from scratch. I hand-wash these pans as I do with all my Calphalon cookware and bakeware.

I'd also like to recommend two excellent baking cookbooks by Anne Byrn: 'The Cake Mix Doctor' and 'Chocolate from the Cake Mix Doctor.' Both books have many excellent cake and frosting recipes, as well as tips for doctoring cake mixes and suggestions for add-ins.

The Calphalon Commercial Nonstick Bakeware collection is excellent. I recommend them without reservation. This 9 inch pan is a great size for cakes, I actually have 2 of them so I can make a double layer cake with filling. This pan is very high quality and the nonstick coating is superb! You can count on perfect cakes with this pan. One note: you may want to check on your cake a couple of minutes early. I have noticed that cakes are done a little quicker in pans with a dark finish. Many newer recipes will indicate the timing for dark finish bakeware. This pan is also a breeze to clean, just a little soap and water and you are done. Wonderful Pan! Highly recommended!

Also, read the Calphalon brochure in the box, if you plan to nest this pan with others make sure to put a paper towel between them to prevent any damage to the nonstick coating.

Do not waste your $ on this pan.I had to return it to the store.
The side bakes much faster then the center of the pan.As the matter of the fact, the center of the cake was still not baked properly after the time was up in my convection oven.Other cheaper brands of bakeware performed much better.

I finally found bakeware that bakes evenly. This is one of several different pieces of Calphalon bakeware that I own. Once I tried the first loaf pan, I had to switch all of my bakeware, since the difference was incredible. I no longer worry about burned edges and soggy centers with anything that I bake. I highly recommend this brand.

I bought 2 of these pans when they went on sale at another store. I have since used them many times and find them to be the best cake pans that I have ever owned. I have owned many different brands of cake pans, but never any that baked as evenly and predictably as these. I agree with another reviewer to check the pan a couple of minutes early as they are dark and will cook a bit faster. If you are used to baking with dark pans already, then you will already know to do this.
I am in the process of purchasing other Calphalon Commercial bakeware, as I have had such great success with these. The brownie pan is excellent as well!
