For most of human history, we managed just fine without non-stick pans and this pan is a fine example of why you really need not bother with Teflon or any other type of non-stick pan. Read the reviews for this and other Calphalon Commercial Hard-Anodized pans and you'll hear that food releases when it's done. Cook things properly and they'll slide right off. I love not worrying about scratching a non-stick surface. The anodized aluminum has many of the advantages of cast iron without the hassles (cleaning issues) and worries (rust). No need to season with oil in the oven, etc. Just use it a few times and it breaks in nicely. Your first fried egg or two might stick, but don't be discouraged.

Eggs stick to the pan, hard to make omelette. Very hard to clean the pan. I think the pan should have a flat surface.

I have many Calphalon pans, which I love, and I'm not sure why but this one sticks and is very hard to clean. The instructions said that you do not need to season the pan and I made my first omelette once it was received. I put butter in the pan but the eggs were like glue and I was unable to release the omelette from the pan without it looking like scrambled eggs. I am very dissapointed.

Love this set, I've had it for 10+ years and suspect I'll still be using it 20+ years from now. Expensive but worth the investment. I bought this pan as a replacement because my darling husband scratched up my original using metal utensils on it. MUST USE PLASTIC UTENSILS OR YOU WILL SCRATCH THE TEFLON.
