Calphalon Commercial pans are made for the serious cook who's looking for kitchenware built to last a lifetime. For example, this straight-sided, 12-inch diameter, 5-quart sauté pan, with its heavy-gauge aluminum bottom and sides, heats evenly and won't warp under higher heat needed for pan-frying. Use a light hand on the heat dial though to protect the nonstick surface from overheating. Also, use plastic, coated, or wood utensils to protect the finish. The curved cast stainless-steel handle is easy to grip and stay cooler than expected, thanks to V-shaped splits where they meet the pan. There's also a short looped utility handle on the opposite side of the pan for heavy lifting. Unlike pans with plastic or wood handles, the extremely sturdy all-metal construction provides the flexibility to take the pan to the oven to keep food warm until it's ready to serve. Remember to hand wash all Calphalon pans--dishwasher detergents are bad for the finish, and their use voids the lifetime warranty.
